You Need to Understand the Position C.H.S. was in. He was already in Legal issues with the NEW AGE KFC and Knew they were changing the recipe.
He had to Have a INDEPENDANT review of the Bag of Corporate Seasoning which, He obtained Legally and could Have assessed, to verify if the Seasoning was Changed. Bill S. Marion kay could have legally Made a comparison to have C.H.S. compare the Item Bill S. made to compare to what He felt was a Original Recipe.
Understand C.H.S. having the Agreement for Sale with a Clause that Brown and Massey or others could NOT change the Original Recipe was which GAVE C.H.S. full right to Quality control the Product that NEW AGE was suppling to C.H.S. and He Hated it. C.H.S. had ALL RIGHTS to STILL maintain the Quality he wanted for Florida, Utah, Montana, Canada plus other area.
Once C.H.S. Had Proof the Seasoning was changed HE COULD THEN revert back to the Agreement He had FOR The areas with a Original Recipe and have ANYONE Mix the Spice and Herbs and THEN also make sure it met the Original Recipe C.H.S. Knew THE 11 Spices and Herbs which was Called the Marion kay Chicken Seasoning NOT the Later 99x which was improved upon the 12 item added.
Yes Bill S. made it Better BUT that recipe was NOT applied to the Marion Kay Chicken Seasoning originally used it had to BY the recipe which contained the !! Secret Herbs and Spices or C.H.S. would have been the one Breaking the contact HE WAS TO SMART TO DO THAT. NEW AGE already Breached the sales Contract.
Bill S Upon visual inspection of the then modified NEW AGE Bag Did NOT contain extracts it Contained inferior items was Bills Assessment. NOT THE PURE 1939 Spices and Herbs
You Need to Understand Contract law and the Mindset C.H.S. had when he went to Bill S. Marion Kay to grasp the story.
The Bags of Seasoning from the Original Marion Kay Chicken Seasoning are MUCH different then the NEW AGE KFC Spice and herbs after the 1980's
The Marion kay Chicken Seasoning still had defined recognizable spices and herbs of what would have been used in 1939. You could see real items NOT only powder

Do you Pre-Dust your Drumsticks or double coat the Drumstick with seasoned flour like KFC does ?

I fried drumsticks in old oil, which was a mistake. Too old, and the flavor in the oil dissipates. I'd make this a rule, as KFC has its own manual to deal with the issue. Anyhow, the drumsticks were good, the basic taste, but the oil was not fresh. I chopped up some of the meat for a sandwich and hand ground some black pepper on it before I made the sandwich. Whallah, KFC. Study the science. I will.

I've been trying to discover how CHS first experimenting with seasonings. I don't believe how did what we are doing, piecemeal tasting. While I wait for a pressure fryer (I don't shop online), I've perfected my crockpot cooking. Keep the meat out of the juices. I cooked another 7, large, drumsticks.
So I took Herbes De Provence, Italian seasoning, Aromat (garlic, onion, clove, celery, msg, milk sugar, etc.), curry, white pepper, and black pepper and just "threw together" a recipe. Seemed a little bitter, so I threw in some sugar and the mix came alive. If sugar is in the recipe, than everything is wrong. I coated the chicken with cayenne olive oil in a bag and then added the regular amount of salt to 10g of seasoning and poured it in the bag. I elevated the chicken in the crockpot to keep it out of the liqued and fat. Some of the best chicken I've ever eaten, and this was a quickie recipe.
The sugar is essential, and the lack of credible information about it has my senses alerted. I know that all bakery sweets need a little salt added to balance flavors, and it stands to reason that a salty dish would need a touch of sugar. I feel stupid. When I was young KFC had a sweetness about it. Not sugary though. Then in the 70s it became more salty. I had forgotten about the sugar shortages when I was young, and how expensive it got. Our donut prices doubled.
I'm including myself in this, and in my opinion, we've been duped. I can take this haphazard recipe I threw together and produce something quite tasty. I believe this is what CHS did. mixed and matched and the 11 final ingredients were what he and Pete settled on.
I'll post this with Ken's forum, which is pretty much dead.

How is it 2 out of 4 Mention Sugar. I guess they were just FOOD CRITIC"S who knew ZERO about FOOD TASTE ?
OH they were ALL in separate locations when asked to review the KFC and, The K.F.C. was also from separation locations but back then was fairly consistent between locations. None of the 4 had spoke to each other and had NO CLUE the others were doing a same testing to compare taste, and evaluate their taste.

The sugar made the mix hotter.
Again, I'm looking for how the whole thing started in order to put a lot of this stuff to rest. I believe that everything started from this point, as in: Ledington's, Grace, 99X, KFC, extracts, etc.
I started with this:
1 tsp - Italian Seasoning 1 tsp - Curry (I didn't have any 5 spice made up, but would prefer it) 1 tsp - Aromat (umanmi, onion, garlic, celery, clove, etc.) 1 tsp - msg 1 tsp - white sugar, ground fine. 1 TBS - White pepper 1 TBS - Black pepper
I took 10g and mixed it with 16g of fine salt. I rubbed olive oil on 7 drumsticks and placed them in a large baggie. I dumped the dry mix into this bag and coated the chicken well. I took an aluminum pie plate and bent it to fit into the crock pot. This kept the oil and liquid below the chicken. I cooked it on low for 7 hours. The chicken was delicious. I can see adjustments, but his was just an experiment.
It is my opinion that CHS and Pete knew they couldn't employ spice companies and ask them to blend copyrighted ingredients into their mix, so they took out the ingredients that they thought would best create that unique taste CHS had discovered. This is why within a year of meeting Pete, CHS "threw two handfuls" of something, probably extract, or msg, into the boat trip order mix. The transition was complete. I never ate the original recipe, and neither have any of you. What I ate was the modified recipe that was gradually changed by the Corporation. Where did it all start? That's what I'm doing.

Many people think Leon Pete Harmon Helped C.H.S. with the recipe THIS IS NOT TRUE.
Leon Pete Harmon watched C.H.S. cook the chicken and Mix the seasoned flour with the Items they purchased at the Harmon family Grocery ON PETER HARMON ACCOUNT.
C.H.S. already had 4 or 5 locations selling chicken as a add-on menu item. Pete Harmon made the Kentucky fried Chicken the Main selling item, and made a agreement with C.H.S. for the excusive right's to ALL K.F.C. in Montana, and Utah.
C.H.S. Word's I started making fried Chicken with Flour, Salt, Pepper, then added the Herbs the Family enjoyed plus spices until he mixed 11 Spices and Herbs for the Secret Blend.
Bill S. from Marion Kay said this; Celery, Garlic, Onions are in almost EVERY Spice and Herb Blend combined for the Extra Flavor
I have ate the Original Recipe which C.H.S. cooked on Many trips and Visits IN PRIVATE HOMES and IN CANADA. When C.H.S. cooked outside of the Franchise setting. The original was NOT Golden brown and had visible Herbs in the cooked Breaded Chicken. The crust was NOT extra crunchy it was a softer breading with Juice and greasy overflowing when you bit into it. There was NO lack of Flavor it was bursting with Flavor

I didn't say he helped him create the recipe. I said he helped him "make it legal" for the spice companies to market. If the recipe was set, as you say, then why did he throw something in during the 1950s and comment that it completed his recipe of 11 Ss & Hs? You can't have your cake and eat it too.
