One thing is certain. If you intend to capture the essence of good KFC flavor/note, you'd best have a source of good quality KFC OR, and eat it on occasion whereby to refresh your memory.

Less certain is a true retained memory of the actual flavor/note of 50's to early 60's era KFC OR. The KFC we just ate comes as close as we will likely ever come to recalling the joy of this distant memory.

Upon further reflection and introspection of the real KFC OR eating experience: In my current opinion, a major key to achieving the note will be in getting the quantity of Mace right. 0.5 grams overpowered and ruined my earlier attempt at utilizing it. And the 0.10 grams which you see here may not be enough, but should be a much safer starting place than 0.50 grams. If Mace is not the "key" that unlocks the door to the 'note' at some magic quantity/ratio, then Nutmeg stands in wait.

Tarragon never disappoints. If you want more herb flavor, add it at about the same weight as for Sage. I kept it out to keep the count at 11, plus I'm now convinced the main flavor(s) are not coming from the herbs, but rather from something more on the order of:
Caraway Seed, Coriander Seed, Celery Seed, Mace, Clove, Nutmeg, Cinnamon, Black Pepper, White Pepper, Anise Seed, Cayenne Pepper, Allspice.
BTW, this sums to 12 ingredients (or 11 if B&W Pepper can be counted as 1)... Perhaps I need to try a completely herb free recipe sometime.

If Mace is not the "key" that unlocks the door to the 'note' at some magic quantity/ratio, then Nutmeg stands in wait. I am big fan of nutmeg at this point in the OR. So I am very curious to see if some quantity of mace works better. It could leave the door open for a blend of both as a further trial.

Our Latest Test is More Pepper that is Pre mixes with MSG ONLY
Pepper and a MSG Blend that is stored together.
We are also using a Pepper Extract the Pepper extract will be carried by a Oil/Salt Combination.
Our Other Spices are Added to the Salt and Shaken Often hoping to have the Salt saturated with Spice and Herb Oils AS MANY SPICES AND HERBS ARE FRESH GROUND we are using the salt to Dry the Spices and Herbs also
WE also Plan on using a end kick of Fresh Spices and Herbs
Double Fine Mustard had been Ground from Mustard and the Black Mustard is Ground similar to Black Pepper Grind. The Mustard will be added to the Pepper
A ketchup powder will be Added to the Other Spices and Herbs as it contains milder tones and a Corn starch for the Carrier.
Dehydrated Garlic, Onion, are pulse ground
Mace shaving were Pulse Ground to Powder.
We are also adding a Powder Butter to the Flour and Chicken Powder
FLOUR IS a 4 blended Flour Super Fine Wheat, Corn, Barely, Buckwheat listed in volume highest to Lowest portions also
The flour is going to be divided into 5 1/2 cup portions
each 1/2 cup portion will be sifted with separate items then added to each other batch to spread out the PPM spice.
I was told that the ONLY reason that the ORIGINAL KFC Spice and Herb were shipped in 2 Different Companies was to Separate the milder Individual Spices that would have been over powered by the Strong Pepper Mustard Cinnamon Kick Spices
They were Blended all together and shipped immediately.
Current Spices and Extract Do NOT need that Care and Control.
KFC NEW AGE has been adding Salt & MSG added to Spices and Herbs in 1 Bag But Milk and Egg are still separate Bag.

To me Celery Seed tastes a lot like an Herb, so it would not surprise me if the above listed Herb-Free recipe made for some tasty deep fried chicken.
