1) I now believe that Herbs are not present in great amounts overall. 2) I felt that the predominating taste was earthiness. Lots of Coriander Seed? 3) I did not get the perception that any Capsaicin containing Chili was present. 4) Based upon taste plus visual (loads of black specs) I now believe that Black Pepper predominates over White Pepper. 5) I couldn't taste any Oregano type flavor. 6) Sage and Savory are at lower quantities than I once believed. 7) I'd say there is a butter flavor present. 8) A licorice presence was noticeable. 9) Lots of Salt. 10) Lots of MSG plus perhaps I+G. 11) I seem to taste Mace, though far less quantity than I attempted when the Mace ruined it. 12) There may be a taste of Cinnamon. 13) Clove seems to be there, but not at a high level. 14) Nutmeg? Perhaps... (but hidden by the Mace) 15) The black specs are smaller than I imagined. No sign of any Cracked Black Pepper. Coarse seems about right. 16) A hint of Garlic is likely present after all. 17) The thing I was tasting when I thought of Capsaicin is most likely Ginger. And ditto for White Pepper. What I concocted afterward, while the taste was still on my tongue.:

Coriander, Ginger, Clove, Anise, and Mace seem likely to be the greatest flavor contributors. A reduced H&S set would want to concentrate both upon these, and upon finding a harmonious balance for these.

I must say that the KFC OR we ate rather late last night was the most flavorful I've experienced in decades. It came from Brunswick, Ohio. I don't go there often, though it is only about 20 miles north of me. This is the first time I ever ate KFC chicken from there. Years ago there was a Lee's Famous Recipe Chicken in Brunswick that garnered our attention, but it has been out of business for a decade or more. The KFC we ate was as good or perhaps better than the best Famous Recipe I've eaten (which came from New Philadelphia, Ohio).
I'm amazed at how the taste of KFC varies by franchise. Unfortunately, the one closest to me (~4 miles) makes consistently awful chicken, and the one next closest to me (~7 miles) makes what seems to be the common fair these days. I'd swear the chicken we just ate was zinged.

There was a distinct seasoned/cooked_in oil aroma. Seasoned Oil (oil that has had at least a few batches cooked in it already) plays a huge part in the note. The coating was oozing oil. Perhaps I'll try spraying my post deep fried chicken with a bit of butter flavored canola spray oil.

The coating was also quite noticeably the heaviest/thickest I've seen in many years. Double dipping? That may explain the zing?

Did you notice any sweet aroma? i went to kfc about 2 weeks ago on a monday when i suspect they have the freshest oil. They took the chicken fresh out of the pressure fryer, which filled the air with a very noticeable sweet aroma that smelt identical to green cardamom.

I wish I knew what specifically Green Cardamom tasted like. Is that the average Joe Cardamom? I've always perceived a sweetness at some level in KFC OR. The second ingredient listed for my 'Chicken Soup Base' is "Corn Syrup Solids". That should provide for some sweetness. One of the four Esquire experts said KFC OR is sweet. Edit: Sugar is a main ingredient in Good Seasons Italian Dressing powder. Think Gloria Pitzer...

Last time I had it there was a sweetness there. I wonder if it's a combination of Nutmeg, clove and cardamom? I have had horrible outcomes with cinnamon and haven't tasted it in KFC or at least in a long time. Silver I agree with a lot of your assessment as it matches closely to what I tasted. And the place I get KFC from is middle of the road at best. I'm not sure about coriander at that high of level. But worth experimenting with. As posted forgetting missing ingredients, it lends to perhaps Glen has the ingredients that are used. Listed in the correct order by weight. We move closer to some combination of Glen and the Jolly Chef ingredients being very close.
