Last time I had it there was a sweetness there. I wonder if it's a combination of Nutmeg, clove and cardamom? I have had horrible outcomes with cinnamon and haven't tasted it in KFC or at least in a long time. Silver I agree with a lot of your assessment as it matches closely to what I tasted. And the place I get KFC from is middle of the road at best. I'm not sure about coriander at that high of level. But worth experimenting with. As posted forgetting missing ingredients, it lends to perhaps Glen has the ingredients that are used. Listed in the correct order by weight. We move closer to some combination of Glen and the Jolly Chef ingredients being very close. Glen conflated Nutmeg, Clove, Cinnamon, and Mace into Allspice. Glen never seemed to hit upon Anise Seed (or a licorice contributor in general). I'm now thinking that Summer Savory should slot in where Glen has Marjoram.

There is no Oregano_like Italian Seasoning related herb flavor in KFC OR that I can detect.

Chicken Fat is typically a harder item to obtain and even from a wholesale source.
Some of the Asian and Ethic stores are a better location to find it.
Silver Glad you had a BETTER KFC DID YOU ASK them a question when they Sifted the Flour last ?
I will suggest ANY ONE who wants BETTER then average chicken ask the KFC that you want FRESH chicken cooked with the FLOUR sifted prior to coating the chicken it will take 25 minutes to Prepare BUT the quality should be way better

We just had the obligatory cold next day leftovers. Random thoughts:
1) The Pepper tastes well more pronounced when cold. My wife is convinced that my pepperiest efforts to date have not burned her mouth to the degree that real KFC does. 2) The meat is definitely brined or marinated in some fashion. The meat when stripped of all crust/coating does not have the taste of fresh chicken. Phosphates? 3) My wife is also convinced that my chicken efforts are not as salt forward as real KFC is. I may have to agree here. Salt permeates and dominates as much as does Pepper. 4) I'm becoming more convinced that the only herbs present are Sage and Savory (or Thyme). 5) I'm not as fully convinced that Ginger is whoppingly forward as I might have been yesterday. 6) The presence of Nutmeg, Clove, Mace, and Cinnamon is obvious (though this may all be coming from Allspice?). 7) I can't seem to shake a distinct perception that Celery Seed is actually present at some level. Can Ginger be lending this impression? Or is it a Celery Extract? Or is it simply the presence of Chicken Bouillon? 8) Licorice seems to be present right along with the Clove and Mace/Nutmeg/Cinnamon flavor, and at nearly a similar level to the Clove presence. 9) Man, they sure use tiny chickens. Coat a small chicken and the flavor of the breading/crust is well more pronounced. It's purely a crust to chicken meat ratio thing... 10) Boy does it beat my best efforts, and particularly those that have not included Celery Seed, hands down.

Can a Celery extract be made which circumvents the allergen nature of Celery Seed? Or is Lovage the secret?

I have been saying for a while now. Getting the pepper ratio and amount right is the biggest hurdle. There is a lot of pepper flavor in the OR. I think the right pre-mix poultry seasoning is a good stand in while working out the pepper and the (allspice, cinnamon, nutmeg, clove, mace, cardamon) or whatever that grouping is.
Curious, did you taste more garlic in the cold chicken? I'm sure I could.

Off the wall random thoughts from the eating of real (and good quality) KFC OR:
1) Could I be confusing a background pine_like nature with a background licorice nature? Is Rosemary present in the place of (or in conjunction with) Anise Seed?
2) Does Rosemary deliver a zing similar to that of Ginger? Could a pinch of Rosemary be there in the place of Ginger (or in conjunction with Ginger)?
