A summation of the 1974 Esquire magazine experts opinions as to KFC OR's ingredients:
Salt Monosodium Glutamate Cayenne Pepper Cinnamon Rosemary Savory Tarragon Thyme Pepper Turmeric Honey or Brown Sugar Almond Mint Flour Milk Egg Celery Salt Caraway Chili Powder Horseradish Cloves
The H&S that received the most consensus among the 4 was Cinnamon.

Do any of you know what the ingredients were in the Settle recipe? I was reading about it on the old "tck" forum and someone mentioned that it was for sale, so someone must know the ingredients?

The Settle family knows the ingredients. If they tried but failed to sell it, then no one else knows it. They eventually went to KFC with it, and immediately got sued. Stuffing recipe most likely means Poultry Seasoning....

Did You Know that KFC and The Settler DID A COOK off of the Morning Show USA on TV.
KFC Corporation supplied the So Called Original and Tommy & Cherry Settler Supplied the Basement Note Cooked Chicken.
The Found Recipe was 100% a Chicken Recipes.
On the TV Show The People who Tested it Had Different Reviews and Agreed the Chicken supplied by Both Parties were Both excellent Chicken and Both were Different.
There DID NOT appear to BE a Direct winner as to which was Better BUT A DEFINATE conclusion that they were two different recipes.
Tommy Did SAY in Court that a Stuffing Recipe DOES NOT CONTAIN GINGER when KFC commented it was a STUFFING RECIPE.

Are Printed on the KFC Label List of OLD KFC BAGS
AS for the NEW AGE Ingredient List Do Contain Many Other Items from Many Different Countries

It is difficult to put a date on counting to 11. It wasn’t part of any of the original trademark, patent, or business paperwork. It doesn’t show up in the early advertising. It seems to be a marketing invention that may or may not have a basis in reality. The words seasonings and elements were used at times, as was the term vegetable, and those gradually lost favor. I personally treat it as a minimum, and let taste be the guide. While it's possible it could be more than 11, I still believe that it's true it was actually "11 herbs and spices". I honestly feel like i am on the verge of cracking the recipe, it is only a matter of time until the remaining pieces of the puzzle fall into place for me. I'd say tarragon is the biggest discovery i have made so far, i can't believe i overlooked that herb so many times. Right now i am looking into a very unique chilli pepper. Peppadew is my favorite

No one smelled Paprika. One of four smelled Chili Powder. Does that hint of Cumin? No one smelled Oregano or Marjoram. No one smelled Nutmeg. No one smelled Allspice or Star-Anise. And these guys were experts.

So we have from the Settle's that the recipe they found in CHS's diary definitively contains 11 H&S. Yet per the KFC representative "about 5" of the real "H&S" were not found among the Settle's '11'. Plus the KFC representative said the Settle's recipe looked more like something you would add to stuffing, most likely meaning that it was a recipe for Poultry Seasoning.
Summing it up via logical deduction: ----------------------------------------------------- About half of the H&S ingredients commonly found within Poultry Seasoning, are NOT H&S ingredients found in KFC OR.

And these guys were experts. Something to keep in mind is that this was in the time of Heublein so the recipe was likely already being heavily changed from even the Brown and Massey days. It wasn’t clear to me from my recollection of the article that the meals that the writers ate were sourced from anywhere near the same location, or even consumed at approximately the same month, etc. Some coordination behind the scenes would have taken place and the simplest way would be to just let them procure things themselves from wherever convenient and write them up independently for future joint publication when convenient. We know that our own experience can vary wildly from franchise to franchise, and that the some locations may “stretch” things a bit, and that the breading sifting may not be uniform. It isn’t even clear to me that they were in the same time zone…
