My Recipe #16 has been finalized, and mixed, and is now melding while waiting to be cooked. No cooking date has been set.

While my Wife is visiting with her family in Missouri I've decided to jump ahead of Recipe #16 and meld and cook this simplified, downsized, and only 3 ingredients beyond B&W Pepper recipe in our Air Fryer today, while placing Recipe #16 on hold for a later date. You may have already guessed it, but 3 Ingredient, Version 2 (which will be for another day) replaces Celery Seed with an equal amount of Coriander Seed.

The 3 ingredient recipe that I'm melding doesn't have the aroma of KFC, but both the aroma and the taste of the mix (in flour) are simply amazing!
Edit: My initial guess is that version 2 with Coriander will neither smell nor taste like much of anything by comparison.

Here's the eating report. Cooked three legs and three thighs. Two legs and a large thigh are being held over until tomorrow...
1) Celery Seed, yum!!! There's no way that I can imagine how Coriander Seed can play competitively in this major league flavor ballpark. 2) Just as for the last time we made a very Celery forward recipe, the Celery Seed somehow noticeably enhances both Salt and Pepper. 3) After eating one delicious (albeit overly Peppery, and overly Salty) thigh piece as is, I started adding things to the remaining leg and thigh, including: a) Ginger b) Sage c) Mace d) Anise Seed e) Star-Anise 4) Of these additions, Anise Seed and Sage both made noticeable improvements, with Anise Seed taking the overall win. 5) Mace is simply not right. Use it very sparsely, if at all. I'm leaning toward not at all. 6) The oddest thing happened when I added a bit of Ginger. It acted like a flavor sponge, leaving behind less flavor after than before adding it. 7) Star-Anise was the greatest loser of the day. Whereas Aniseed gave the chicken a nice hint of licorice, Star-Anise oddly accomplished nothing. This completely shocked me!
In general, everything that I added, even singly, eliminated the perception of over Saltiness and over Pepperiness and brought harmonious balance. And when I went back to the coating with no additions the over saltiness and pepperiness immediately returned.
Sage and Anise Seed (Aniseed) are the big addition winners. Mace is off base. Ginger only seems to rob flavor. And Star-Anise is a major nothing-burger. Each was tried at least twice or more on individual bites.
I'm no longer afraid of the impact of Mexican Oregano. It could likely have gone a bit higher. But it is clearly a positive flavor contributor.
With both Sage and Anise Seed added at the same time I felt that I was emerging the note.
If you choose to make the 3 ingredients recipe as written, without extras, cut back on both the Salt and Pepper.

If the Star-Anise contributed anything at all (which is debatable), it was a flavor of Cinnamon, and it did not belong. Perhaps Star-Anise and allspice simply can't be combined.

Silver excellent write-up. I agree with Anise Seed > Star Anise in my testing as well. For me ginger has helped with the note. As you know I have heavy pepper side so maybe that's the requirement to get the most out of ginger. You probably have saved me from buying Mace. Thank you!

Here is the obligatory next day eating report for the 3 spice chicken:
1) As always, even better tasting chicken than for the first day, but this time not by much. Celery Seed is yummy, and I can say no more. 2) After eating the first leg 'straight up' I began adding sprinkles from this laundry list: a) Garlic Powder b) Onion Powder c) Cumin d) Aromat Original (South Africa) e) Fennel Seed f) Smoked Paprika g) Ground Coriander Seed h) Lemon Pepper i) Nutmeg
3) To keep this short, only Lemon Pepper and Aromat brought with them "definitively" improved flavor, with Aromat being Spectacular! Aromat delivered a definite KFC_like note of satisfaction, and put a smile on my face. 4) Fennel did not provide nearly the magic that Anise Seed delivered yesterday. But it is better than Star-Anise. 5) Smoked Paprika is nice in small amounts, but simply not KFC nice. 6) Garlic Powder simply overwhelmed everything with a powerful taste of Garlic. Very strong, and also very wrong!!! 7) Onion Powder is simply wrong... 8) Cumin didn't dominate at all as I had initially anticipated, and a small amount "might" be flavor beneficial. 9) Ground Coriander didn't do much, but didn't seem to hurt things. It is at best neutral to perhaps minimally beneficial. It may need Ginger. ? 10) Nutmeg simply tasted very odd and off base. Nutmeg is not Mace like as to its flavor at all. I think a very faint hint of Mace may actually be note beneficial, but now I'm doubting Nutmeg.
The flavor enhancers and chemical goodness of both Lemon Pepper blend and Aromat blend are big winners. Unfortunately they are cornucopia blends. Too much Lemon Pepper will bite you with is Citric Acid... But with Aromat, the more, the merrier!

Coriander Seed may be merely a combined spice count place holder and space (volume) filler.

I'm no longer happy about my melding mix #16, and I'm considering tossing it out and moving forward with #17 (as seen below) for my next cooking session. Your opinions on this move are greatly welcomed!!!
