I think it depends on what you are trying to test in this batch. From a pick one. I'd probably go with the first one with Celery Seed @ 1.5g. I'm more comfortable with that then coriander at that level. I have only taken coriander to 1g. I am feeling substituting coriander for celery seed isn't 1:1 but that's a test I need to do to confirm.
Personally I'd swap the weight of your anise seed with that of nutmeg. But that's based on my personal testing to date and the type of ingredients I have.
I know it's a PITA but if you halfed the recipe and cooked one with Celery Seed and one with Coriander at the same level. It would help you determine which one is "in" or if a 1:1 is the right substitute.

That's a great idea, but rather than half it and make it up twice, I will make it up in full sans for holding out the Celery Seed/Coriander Seed. Then I will split it in half, and add 0.75 grams of mortar & pestle crushed Celery Seed to one, and 0.75 grams of mortar & pestle crushed Coriander Seed to the other. It will look like this:

Personally I DO NOT think Onion should be left out it carries to much Flavor Dehydrated Garlic and Onion crushed or ground in house KEY KEY KEY

The previously melding #16 has been tossed out, and the split (half with Celery Seed, and half with Coriander Seed) #17 recipe is now melding and on deck to be cooked.

You could have a point, but at 0.50 grams I'm trying to push the envelope for Anise Seed whereby to definitively evolve the licorice note. If it proves to be too much of a good thing, then it will teach me a lesson to back off on it. I already have had the experience of eating chicken with too much licorice from when I pushed Star-Anise too high once. But oddly enough my Wife did not think the Star-Anise batch had too much licorice in it, and she liked that batch. Both of us must perceive licorice quite differently. I don't want to boost the Nutmeg while I have Mace in there at 0.15 grams. That in itself is like adding Nutmeg at 0.30 grams. And I have Nutmeg at 0.25 grams, so "effectively" my Nutmeg is already at 0.55 grams.
