When he was working on finding an incandescent light bulb filament that would adequately last, Thomas Edison tried hundreds of filament materials that did not last. He was confronted by a reporter who suggested that he was doomed to be a failure. And he shrugged it off with a comment that he learned something from each burned out filament, whereby each one was another material he no longer had to consider. I.E., each failure was effectively a success. Or at least a valuable lesson on the road to success...
But I don't take good notes, and on more than one occasion I have re-traveled broken paths.
I've already determined that 0.50 grams was way too much Mace. Now I'm trying to determine if 0.15 grams is still too much, or if perhaps it is too little, or if the benefit that I perceived even at a sensory overload level for it will still be a perceived benefit at 0.15 grams, or if Mace is merely wasting my time.

Another experiment that is in play for recipe #17 (in addition to Celery Seed vs. Coriander, and Anise Seed at a higher level, and zero Oregano family ingredient) is to see whether or not my 0.70 gram sum-total combination of Nutmeg, Clove, Mace, and Cinnamon will improve upon the flavor and/or note of 0.70 grams of Allspice.

MY QUESTION TO EVERYONE is how can we Help each other ? The best means would be to independently corroborate the efforts of others. But this is a game that has costs, not only in time and money, but also in terms of overall health. In all three of these ways one can only afford to cook and eat so much deep fried chicken. Another roadblock is that the internet is littered with KFC cloning success stories which are likely all false. We have all grown quite hardened by this, as it presents a major dis-incentive for attempting duplication, and we literally have no reason to believe the success reports of others thereby. The Chicago Tribune and their big deal over the Ledington recipe did far more damage than good in this regard.

Excellent news.
Just got back from a local store they received a ton of chicken drumsticks. So they had packs of 6 for 87 cents Canadian. Less than 50 cents USD. Crazy. So I have some drums to experiment with now

The Cooked Recipe #17 eating report:
The good: 1) We are Oh so close now! Loads of note and KFC_OR_Like flavor!!! But better per my Wife... 2) Easily our best recipe hands down. Almost at the end of the quest. 3) Celery Seed had a unique to Celery delicious spiciness, and Coriander had a similarly delicious nuttiness. 4) My wife liked the Celery Seed version a bit better, and I liked the Coriander Seed version a bit better. 5) We both agreed the Coriander level is nigh on perfect, and the Celery Seed could be upped a wee bit (by about 0.25 - 0.30 grams). 6) Mace is definitely a key constituent. 7) The combination of Mace, Nutmeg, Clove, and Cinnamon was nigh-on perfect. Likely better overall than an equal weight of Allspice.
The could be improved: 1) For me the Pepper "bite" character was low, and about 0.20 to 0.25 grams of Cayenne Pepper should address that. My Wife likes the Pepper as is. 2) The Salt level was perfect per my wife, but to my taste buds it fell a tad short of the KFC we ate Sunday and Monday of this week. I say add half a gram more.
The bad: 1) There isn't any bad. This is seriously great chicken.

For me the change happened with the upped amount of ginger and the Nutmeg.
