Silver I am interested in your mace use. I find nutmeg a must have at this point so mace is close for me as something I'd like to try. Most nutmeg used by me was 0.25g into 200g. I'd try higher I think at some point.

I believe that I got the idea to try it from Chickenman and deepfriednew101 , bur Deep Taste may be a source for my inspiration also.

Perhaps there was also some subliminal suggestion from somewhere……

I always presumed it to be pronounced:
mac-a-me (with the 'e' carrying more of an 'a' sound)

I’m not sure, is the other way deepfried101, or halcoleman11? Getting sleepy, might go count the Red Deer and drift off….and lurk.

1.Pepper (black and white) 2.Red pepper (Cayenne) 3.Garlic and onion powder 4.Sage (premium) 5.Rosemary (premium) 6.oregano (premium) 7.Tarragon 8.Caraway 9.Ginger 10.Allspice 11.Nutmeg 12.Cardamom
Just mixed that up^ man it smells amazing!! put the pepper and ginger back up to where i should've had it and it smells real good now.
Tip: if the raw spice mix doesn't smell right to begin with, don't even bother using it, because that's what the chicken will end up like.

Mace was one of the MAJOR items used in Making Donuts and All Donuts in the 1930's were Lard Fried and THEY Almost All USED MACE in Bakeries.
Mace was also ON the Original Museum Shelf and was in the Original 1940's Photo's of CHS Kitchen.
