If we can accept the mentioned detail that NZ's first KFC franchise occurred in 1970-1971, then the 4.75 Lb. drum is at least 6 years post CHS's sale of the company. If we can accept CHS's sentiment that the OR was gutted post the sale, then there is likely little OR to be reflected within the drum. But salt is different. It is likely the easiest ingredient to pin down to within a rather tight range as to its ratio of the 4.75 Lbs. by weight.
Salt is (in my opinion) likely the least changed (albeit changed none the less) of all of the nominal by weight ingredients as time brought with it an evolution of componentry of the OR.

If the essential "original recipe" taste is to be "nominally" retained, then one can infer that as time has past the Pepper, MSG, and H&S levels have declined due to (respectively) a transformation toward the use of Pepper Extractives (likely the first change made), then to MSG enhancers allowing for a vast reduction in actual MSG (likely the second change made), and lastly a reduction in H&S which was supplanted with various of direct offset H&S extratives, PLUS "overall" flavor boosters which transcend beyond MSG, such as hydrolized and/or autolyzed yeast and yeast extratives, etc... Of late I'm becoming of the opinion that the first of these changes occurred before the 40 Oz. plastic bag. Plastic bags first appeared to become widely used in the early to mid 1960's. I feel the same way. Pepper extracts were being used by the time we see any of those plastic bag seasoning mixes. Even to 40oz ones
And the order of the decreases and use of extracts or other enhancers makes total sense as well
