And thus it seems as if a much better understanding of the proper level of MSG in grams for a batch scaled to 200 grams of flour is required.

I think in Dustin's he has something like 3g MSG 5g Pepper 1.3g Garlic Salt 3.6g H&S Plus Salt And I think his pepper is low based on my testing. As I have posted. But I also do not think he needs anymore H&S.
I really do think that if you use Garlic Salt then total H&S sans pepper is no less than 4 and no more than 5g. If you use garlic powder than that drops to no less than 3 and no more than 4g.

In the old pork sausage seasoning recipes I have. White Pepper is 40-55% of the spices. Did he stay in this range for total pepper or is Black Pepper add on top to get us in a 50-60% range or more?
Assuming he used knowledge of mixing sausage spices etc in his construction of this.

But he also had 0.60 grams of Cayenne Pepper. True enough but that would be more than detected in those two studies depending on brand.
More than one way to solve for sure though.

The old manual you posted had 3.75LBs of Salt going into 25lbs of flour. So 60oz. But was there extra salt in the bag as well?
If there was. It may make sense it could be 4oz to total 4lbs of Salt into 25lbs flour. or 16%
Assuming it was a 40oz seasoning bag at this time.
Scaled back to 20g version. You would have 18g for MSG,PEPPER and H&S then your 2g salt
I think we are around the same vintage. And as you may remember the old KFC in the 60's. Was salty as heck. You couldn't drink enough after it. Probably why I have to watch my salt intake today.
I'd love to be able to figure out MSG to a reasonable number. Work this formula down to fewer variables.
I have cooked 3g MSG and 8g as a range. No higher, so I can't say where the point of diminishing return is on it

Iteration #5 (likely to be the final for this series) maintains Eugenol and Scoville Units commensurate with Dustin's, while minimizing MSG and maximizing H&S. And all while holding to strict compliance with the 40 ounce bag. If boosting H&S is the answer (which I must admit is not something I've been in agreement in the past) then this iteration may be a step in the right direction. But with MSG this low it may not ooze with that oh so enjoyable MSG induced lingering aftertaste.

Perhaps a better #5. This one solves the problem of trying to figure out "other than B&W Pepper" H&S weights by setting all of them sans for Paprika and Clove to 0.70 grams. I'm actually tempted to try this one.

Well, it certainly breaks the mold which has not led anyone to the full song 'note'. Think outside of the box and try a different path through the maze. No guarantees that it will lead to the cheese. From memory, after trying over 1,700 different light bulb elements, Thomas Jefferson when asked if he was ready to admit to failure, responded by saying "I have not failed. I have discovered 1,700 things that don't work". He had merely traveled down 1,700 paths through the maze... Sadly, I don't have 1,700 attempts at this left in me. At one attempt every two weeks that would require a bit more than 65 years.
