One Step forward two steps back sounds like a country song.
Many of you may not remember BUT CHS and KFC put out records with Christmas Music on it for years

There is some info on the pages of the pictures of this KFC operations manual that are relevant. www.ebay.com/itm/334402826957?It might be worth capturing the photos and posting them here.

What size were the early (mid to late 1950’s) Canadian flour bags that were used? How did it change over time?

I’ve read the old manuals. But at some point, Canada went metric. I wondered how that affected flour used at Canadian locations, and when. Since Marion Kay was supplying Canada at some point, with their original chicken seasoning product, before 99-x, what did they use for flour at that time, for instance? 10 lbs?

Metric was Not until the mid and late 70's Current Flour is 18Lbs 8 kg? That seems like an odd number. I would have thought it would be 22 pounds or 10Kg.

18 Lbs. is 8.165 Kg. (rounded to 3 decimal places). It's no different than for 25 Lbs., which is 11.340 Kg. (rounded to 3 decimal places).
What is weird however is the KFC choice to mix Pounds and Ounces with grams and Kilograms. Strict uniformity of units would make far better sense.
