There is a certain flavor associated with high gluten flour which may actually prove beneficial to the 'note'. Hmmm? The flavor can be detected in Pizza crust and Bagels.

deepfriednew101 , this page from an old KFC manual seems to dispute your thread starting post and it's contention that KFC_OR uses high gluten flour:
It explicitly instructs the use of soft wheat flour that is LOW in gluten.

Yes Those manuals were wrote for Brown and Massey New Age Corporation Why would they go so far as to switch the flour from one extreme of the flour spectrum to the other and opposite extreme? What would motivate them to do this?

the Manual Page that Silver Posted is from the 70's If I'm not mistaken from reading it.
The Flour from the 1930's was Flour made from Necessity and what the Mills could make with the Grains that were delivered to Process at the Mills and many times they had to Blend Wheat, Corn, Barely JUST to meet supply amounts.
as the Time went on Regulations and more MASS production and equipment to clear land and harvest crops made Wheat available and most Mills processed straight Wheat flour and Blends.
This is where chemicals had to start be added to the flours
