revealing the ingredient I thought belong in the 11 Bleached Cardamom initially shocked to see a 1920s spice tin of it I enthusiastically tried it. used 3 tsp of it and the result was a horrible pine sol tasting chicken never use Cardamom ever. Even if bleached it still stuck out, it doesn’t belong in there. Moving on.

okay. tried black cardamom (the colonel’s way) what i mean by that is I used the pods and all and grind in a coffee grinder. The husks contain turpentine smoky flavour that compliments the actual seeds.
make no mistake. black cardamom can be mistaken for bacony smoked paprika

just a hunch. using just wheat flour alone in skillet frying always results in a gummy soggy chicken afterwards. pressure frying does that unique 12 psi push on the outer coating of chicken thereby creating a thin emulsified soft crust which is the signature of original recipe chicken.
BUT we can replicate this without the pressure fryer by using a combination of gluten-free flours. if one watched the KFC unwrapped extensively, one can noticed the large box of salt minus the msg and seasonings, the fine dustiness of the flour.
when i tried a combo of rice flour and cornstarch. my chicken is still soft crispy a day or two in the fridge just like KFC!

look how green the KFC mix is take the fruit of my research and ponder why the Colonel said “4 oz of savory”. it’s because he used so much of it that the finalized seasoning looked dark green. 5 tsp or “20 grams of this herb” for 4 cups of flour is summer savory. why 4 cups you may say (it’s because it’s hard to press & fold in a mere 2 cups of flour, 4 cups have more volume to fully coat the piece. I tried everything else. sage, thyme, and oregano in the tbsps and it was terrible. summer savory have that sweet, hot, spicy peppery thyme oregano marjoram sage fruity smoky charcoalish flavour to it. Bitter but when cooked the bitterness mellows and disappears. the Colonel’s constant visit to Canada could also be a subliminal hinting of the Canadian sage aka summer savory, he also mentions “lemon” or citrus a lot during his last interviews (probably hinting at citrusy herbs & spices) his fondness for the citrusy tellicherry pepper confirms it. his secret recipe is chocked full of these citrusy characteristics. and my current seasoning is modelled after it but mustard is included. i just can’t omit this ingredient because mustard is crucial to that “emulsified soggy coating” kfc chicken is known for. nevertheless, mustard can hide in the word “spice” at least outside Canada. I don’t know KFC Canada but I suspected they blend the shortening with mustard oil
