Another potential means whereby to actually scale the bag down to 26 ounces without resorting to extracts might be as follows:
5.875 ounces of MSG + 0.125 ounces of 'I+G' 7.5 ounces of combined White and Black Pepper(s) 5 ounces of other H&S 6 ounces of Salt 1.5 ounces of Cayenne Pepper

Or as to the 40 ounce bag did you perhaps mean something like this? 12 ounces MSG 11 ounces B&W Pepper 8.5 ounces Salt 8.5 ounces Other H&S For the newbies among us, the old 40 ounce bag (which is now a 26 ounce bag due presumably and primarily to extracts replacing real ingredients, but also potentially due to 'I+G' replacing much of the MSG) would be added to 25 Lbs. of Cake Flour plus 3 Lbs. of additional Salt.

MSG 40.00g. Salt 36.00g. White Pepper (1) 24.00g. Black Pepper (2) 7.00g. Sage (3) 6.50g. Coriander (4) 6.00g. Ginger (5) 5.50g. Allspice (6) 4.50g. Thyme (7) 3.50g. Savory (8) 3.00g. Marjoram (9) 2.50g. Green Cardamom (10) 1.50g. Anise Seed (11) Total = 200 grams Instructions: Add 20 grams of the above mixture to 200 grams of flour plus 24 grams of Salt plus 3 grams of DME (dry malt extract).
