There seems to BE a Ton of Bag size Question for the Spice and Herb for Colonel Sanders Original Recipe EVERY ONE KEEPS there mind Stuck on 26oz 26oz 26oz Bag amount I think Ken has YOU ALL BRAIN WARSHED The 26oz Bag came about AFTER the KFC was Acquired BY Brown & Massey Look at the OLD TEF video and look at the size of the Bag used then compare REAL COMMON smart principles Claudia found Bags this size to Package the Spices for shipment View the Sexton Commercial size Tins in the Museum and else where and see the size of Containers from 5 to 11Lbs of Spices in the Tins Then compare it to the TEF Bag I have even shown comparison of the Bucket, The Lug with Bags in the TEF show before and compared it to Bags as examples

Speaking for myself and I think Silver is in the same place. We are working on 40oz or 2.5lb recipes. Which fit the above concepts

Yep, all of my recipes are scaled to a 40 ounce bag at present. flg and I both came to the conclusion that only extracts plus 'I+G' could shrink a bag to 26 ounces. That said, the H&S is not really impacted by this in any major way, sans for extracts which are beyond the reach of us mere mortals. And the Salt can't be manipulated sans for within a rather narrow range. So that leaves mainly the weights of the B&W Pepper(s) and MSG to be variably manipulated (upward) whereby to conform with the 40 ounce concept (bag or no bag).

26 ounces = 1 Lb. 10 Oz. = 737.1 grams
32 ounces = 2 Lbs. = 907.2 grams
40 ounces = 2 Lb. 8 Oz. = 1,134 grams

I agree. The majority (not all) of the reduction is from MSG for I+G as Silver states above. Plus Pepper extracts. Not to say other H&S aren't extracts. Those are the major areas of reduction. I fully believe you can create a home version within 40oz at this point in time. Until, unless we prove pepper must be much higher than we think or have personally used.

The 40 ounce bag likely contained roughly:
12 to 18 ounces of MSG 9 to 13 ounces of combined White and Black Pepper(s) 4 to 6 ounces of "Other H&S" 6 to 12 ounces of Salt
With a mid-range of roughly:
15 ounces of MSG 11 ounces of combined White and Black Pepper(s) 5 ounces of other H&S 9 ounces of Salt

When the mid-range as seen in the post directly above this one is scaled down to 200 grams of cake flour you get roughly:
7.5 grams of MSG 5.5 grams of combined White and Black Pepper(s) 2.5 grams of other H&S 4.5 grams of Salt
And this sums to 20 grams.

And to scale the mid-range to fit the 32 ounce bag requires roughly:
6.875 ounces of MSG + 0.125 ounces 'I+G' 11 ounces of combined White and Black Pepper(s) 5 ounces of other H&S 9 ounces of Salt
And to scale this to the 26 ounce bag without resorting to extracts is impossible.

There may be a means whereby to actually scale the bag down to 26 ounces without resorting to extracts as follows:
5.875 ounces of MSG + 0.125 ounces 'I+G' 11 ounces of combined White and Black Pepper(s) 5 ounces of other H&S 4 ounces of Salt
But at this level you had best brine your chicken for an extended period of time in a load of salt.
