Flour 200 grams MSG 3 to 8 grams salt 28 to 32 grams White pepper 2 to 3 grams Black pepper 2 to 5 grams 5 Savory 1 to 2 grams 6 Coriander 1 to 1.5 grams 7 Ginger 1 to 1.5 grams 8 Clove 0.1875 to 0.25 grams 9 Star Anise 0.125 to 0.1875 grams

I'm not sure that Lee's Famous Recipe has any Ginger and Eugenol components in it at all. It does not deliver any hint of a KFC_Like note to me.

I'll buy that! I think this should make for a good starting point:
Flour 200 Grams Salt 30 grams -------------------- MSG 7.00 White pepper 3.375 Black pepper 3.375 (2 grams of which are medium coarse) 1 Savory 1.25 grams 2 Coriander 1.25 grams 3 Allspice 1.25 grams 4 Ginger 1.25 grams 5 Sage 1.25 grams
20 grams below the dashed line = 40 Oz. bag
Edit: Grind everything sans for Flour and medium coarse Black Pepper.
Edit #2: My 'brain level only' taste buds (I.E., not the actual ones in my mouth) are suggesting to me (based upon experience) that this should (on first guess) taste better than Lee's, and perhaps even deliver a nice KFC OR Like 'note'.
Edit #3: For 16 ounces below the dashed line, and thereby 32 Oz. bag compliance, add only 3 grams of MSG. For 13 grams and thereby 26 Oz. bag compliance leave the MSG out completely.

Are you trying to Narrow down Flavor Profile with Limited items or is it because the Court Limited items ?

The Original Has 11 Spices and Herbs. Bill S. Marion kay said he added another item to the original 11 and C.H.S. approved. After the Court Case Bill S. Said he had to Make a Change which was NOTICED in the 99x Flavor. Kordell Claims the Recipe has Not changed ? Grace's perfect Blend says Their Seasoned Flour has 12 ingredient's Herbs and Spices. (Cannot Sell in Canada ?) Famous brand is restricted to 5 items and other competitor's There chicken Does NOT taste LIKE K.F.C.
Limiting to 5 may help narrow the field BUT it will NOT Produce the K.F.C. Taste or Final Product that's why it was limited?
I can Agree that working on 5 Items is a Great Idea to find a certain Taste BUT Is it possible to Get to the K.F.C. original ?
