If you increase the MSG to cost cut your herbs and spices, you have to reduce your Salt. MSG contains one third the sodium of table salt. I don't have any proof for this assumption, but I think it is quite likely and a logical explanation for the Salt decrease that you describe.
Another thought. What if 99X was supposed to restore the OR to its former glory, tackling and challenging the corrupted Corp version? Wasn't this actually the objective? This would make 70s 99X the most reliable source we have.

Certainly not ~1/3 on the Salt flavor scale despite the factual accuracy of this for Sodium. Perhaps 1/10. ? I find a sort of sweetness to MSG, and believe that the sweetness (due to the Glutamate ion being a Sugar) is likely the Umami driver.
You may be onto something in regard to 70's 99-X.

In theory and Principally thinking logically
One would follow that When Bill S agreed to change the 99x BY agreement with K.F.C. New Age to follow the then existing court case of 1966 vs Famous Recipe Fried Chicken To No more than 5 Individual Spices and Herbs excluding Salt, Pepper, M.S.G.
This Sets the Record that SALT, PEPPER, M.S.G. are Principally Held Outside the 11 Spice and Herb Recipe OTHERWISE the Judge COULD NOT have been limited to the not more then 5 INDIVIDUL SPICES. The Judge CANNOT enforced and Order something which is NOT part of the 11 Herbs and Spices to NOT be USED as that would be a Ruling against the Principle of Intellectual Property Protection. Also A KEY Point of the Court case WHICH the Judge could Do is LIMIT other Competitors to the same court Order He had jurisdiction to do so.
Therefore One would conclude as C.H.S. had said FROM DAY 1 He originally started with Flour, Salt, Pepper. HE DID NOT say salt, pepper, M.S.G. so then M.S.G came AFTER THE 11 Herbs and Spices were made in 1939 and 16 Years later which C.H.S. spoke about in other New Articles. Which would have been 1955 when Noe commissioned C.H.S. to cook for the Cumberland Falls Two Handful event One of C.H.S. Largest known Chicken Orders of the time.
This indicated that C.H.S. was cooking at least 60 to 75 whole Chicken that Day. which would have been approximately 30 to 35 Pressure Cookers of chicken and 2 Lugs of Seasoned Flour or 50Lbs of Seasoned Flour.

Yeah I get the sweetness too, definitely. With regards to the changing Salt levels, wasn't it the case as well that KFC sometimes did brine, sometimes not? You will know better. So could more Salt indicate non-brining? That would make it two possible answers to the Salt question.

But I surmise that KFC likely has their chickens injected with a brine, likely right at the source, and not by KFC, but rather to KFC's specifications. That indeed would open the door to two answers. I also surmise that such injection is at a level of about 12% by weight of the pre-brined weight of the Chicken.

You may be unfairly conflating the Lee's litigation with the MK litigation. Lee's was likely penalized to a greater degree because he knew the original recipe. It can't be illegal to attempt to clone something close to the OR, else we would all be behind bars by now. Quite technically MK wasn't doing anything illegal until the moment that the court decision was rendered. And the court decision was not in regard to their recipe.

I would add the problem with your theory here is that Karl disclosed 6 Herbs and Spices outside of Salt, Pepper and MSG

It's the best stepping stone we have to reach and then consider moving back in time from there

Early 99-X is only "potentially" the best stepping stone if Allspice is both qualitatively and quantitatively superior to Nutmeg, Clove, Mace, and Cinnamon. I've personally never quite been able to get it to work out that way, though I keep trying.
The known ingredients within 99-X can offer us little additional assistance in capturing the brass ring of the all important 'note' in my opinion.

Early 99-X is only "potentially" the best stepping stone if Allspice is both qualitatively and quantitatively superior to Nutmeg, Clove, Mace, and Cinnamon. I've personally never quite been able to get it to work out that way, though I keep trying. The known ingredients within 99-X can offer us little additional assistance in capturing the brass ring of the all important 'note' in my opinion. I do think that Cinnamon, Clove and Mace are superior to Allspice. No question. And I like the idea of them being OR items. However, we have several sources now mentioning Allspice. Not a single good source for Cinnamon, Mace or Clove.
