To me Allspice doesn't taste like Cinnamon, Clove and Nutmeg/Mace. It for me has a "darker" taste. Think a small amount of pepper added to these or something. Now could I make an Allspice clone mixing those ingredients in the right ratio with some pepper, sure. I know you have had success and have mixed your own blend of those that works well. And you probably should stick with that as it works. In looking at the ratios your used though, they are not what standard substitution recipes say. Not that that is bad. Just anyone creating an allspice clone from a standard recipe may get different results.
My personal issue is cinnamon which even in small quantities has ruined 2 or 3 cooks for me. Others make it work. For me it stands out way too much. I use a very high quality Saigon Cinnamon so maybe I'm using the wrong type?
More than 1 road leads to very similar results

More than 1 road leads to very similar results IMHO, standard substitution recipes (if one can call them that) are made by simpletons for use by simpletons looking for simple and easy solutions, as opposed to critically functional and effective solutions.

flg BUT Graces also Promotes they use 12 Items and It's NOT the Original ?
so they Play the Grey Law word Game and unless K.F.C. shut's them Down they can keep selling the Grace's Perfect Blend
A NOTE also the OLD Lawsuit was against Pat's Fried Chicken WHO WAS NOT selling a seasoned Flour Mix at the Time?
So Grace's is a NEW Corporate spin-off which is flying under the Level of enough interest to Bother NEW AGE K.F.C.

Almost All chicken packed at producer is NOW Pumped and have been for Decades
You must read the Packaging to see if it is Pumped or Brined.

But I actually believe that with recipe robustness, changes can be made and you can substitute Allspice with CI, CL & MA and vice versa. I am open for it. But individual superiority does not always mean they blend in well in a team. I'm not defending Allspice, but it was good enough for CHS at some point.

When CHS stated 10 H&S (some say 11, which clearly has a better ring to it) did he mean that he used specifically these 10-11 all the time, or that he had 10-11 that he could go to, with a couple of them interchangeably, whereby to fully derive the 'note' with less than 10-11?
As an example, I seriously question whether Savory is actually needed when both Marjoram and Thyme are already present, or whether Marjoram and Thyme are needed when Savory is already present. My Recipe #17 used Savory, and didn't use any Thyme or Marjoram, and I think of it as great (and also highly note-worthy) Chicken.

I'd be shocked if CHS did not sign a "no compete" agreement in conjunction with a "waver" of his right to use original the recipe when he sold the company. From that perspective he may have signed away his ability to ever again legally use the Nutmeg, Clove, Mace, and Cinnamon blend, leaving him with no other choice than to default to Allspice.
