Change the word 'Oz.' in the recipe seen above (or in any ounce based recipe) to read 'grams' for all ingredients and you have an instant 28.35X weight of ingredients reduction. Plus you should subsequently have enough mix to coat ~32 mixed pieces of chicken.
The most radical 'twist' seen within the above recipe is Tarragon in precisely the place where one would likely expect to see Sage. This evolved from my recent herb sprinkle on tests in which Tarragon exploded the Chicken with flavor, and Sage was way behind in added flavor boost benefit (and Basil was a complete nothing burger). What if MK and Grace's add Sage only because they are forbidden from adding Tarragon?
My best recipes to date have included Anise Seed for it's subtle hint of 'licorice' contribution. Tarragon also imparts licorice, albeit well less than Anise Seed, such that more of it is required.
Of course adding Sage and dropping Tarragon is freely open to all who don't like to rock the boat.

oz or grams come out to the same recipe just less Volume over all NO different then mixing Claudia recipe with all teaspoon or all tablespoons the Only end result difference in the end is more volume BUT same Taste
That's Why Shelton's 20, 13, 10 adding to 100% scaling work with ANY measurement formula break down which is based on 100% scaling

When you look at 70s and modern 99X the order would be Sage, Allspice, Coriander and Ginger. If sorted by value and name, we have to conclude Sage is the highest of them. Allspice, Coriander and Ginger can be same value because they are in alphabetical order. So you would basically only have to find out your threshold for 1) Sage and 2) Allspice. As most will agree Coriander and Ginger are surely not less than Allspice, just keep them same value. Why spend so much time on numbers and bag compliance but yet neglect this precious information? No offence.

No offence. Correct and I would add that the bag of 99x that appeared from the 70's lists Red Pepper after Allspice. So that order is Sage, Allspice, Red Pepper, then Coriander and Ginger.
I worked up my take on what that could look like:
Early 99x bag from around 1976-78:
9g Pepper (Black and White) 8g MSG 2.6g salt 1.5g Sage 1g Allspice 1g Red Pepper 0.8g coriander 0.6g ginger 0.2g Thyme 0.15g Marjoram 0.15g Savory

I feel in the later versions of 99x post court cases. Both Allspice and Red Pepper were removed and replaced with more salt. Then a pinch of cayenne was added. Which may have fell under a pepper not an H&S. So was allowed. A few others slightly adjusted.
something like this:
Modern 99x version:
8g MSG 8g Pepper (White and Black) 5.3g salt 1.5g sage 0.8g coriander 0.8g ginger 0.2g Thyme 0.15g Marjoram 0.15g Savory 0.1g cayenne pepper

What I can't get straight info on is, was there a 2% or less rule that applied to ingredient listing that this may have fell under. Meaning would in the first instance of the bagged recipe , coriander and ginger have to be .5g (.5oz) or less to keep them and and others off the listing. Did a rule like that apply later in the 80's. Meaning now coriander is more than .5g(oz) in 99x.
Or was this even a rule.

I pushed Sage down the pecking order in a rather Grace's Strong Blend (per Glen) sort of way. Then I snuck in Tarragon, Cayenne, and Garlic.
If I split the 26 gram batch (as seen ~5 posts above) in half I can add more Sage to the second half if I think I need to.

flg There were rules that exempt listing which have now been removed in some countries and ALL amounts must be listed.
Mexican Oregano aka Sage in the Old Days could have been disclosed as Sage and then later in years been Listed as Oregano or even NOT listed because BOTH were classified safe items NOW this is ONE of the very Rare items which falls under a either or Name list potential.
Salt is another item when used as a Carrier For and Spice, Herb, Vegetable was allowed to be labels as SALT ONLY, NOT celery salt, Onion Salt, or Garlic Salt if the company choose to list items, or NOT.
NOW import UNDERSTANDING which has changed with decades also: 1930 Laws and NEVER CHANGED Standing still in 2023 Laws, Regulations For items Packaged for NON retail Sales and only used within the Franchise internal use, NOT public Sales retail of the packaged item used for preparation of other sale items. ALL THEY MUST LIST UNDER LAW IS: Minatory SALT, M.S.G., Allergies related items, and mandatory listed Vegetable items then only word Herb or Spice
99X was a Retail item being SOLD to K.F.C. Franchise ONLY which C.H.S. had control over First, LAW was different for listing Ingredient then KFC NEW AGE packaging its own same 11 Herbs and Spice's. Two different Label Law applied at this Part of Era time period.
2023 Most of ALL Spices and Herbs are classified as SAFE and DO NOT require to be list AT ALL on any NON retail Franchised used items. BUT retail Packaged items typically list some items for easy of sales? Garlic, Onion, are list ON either Retail or NON retail as it's a Highly asked item people like or dislike so Most list it as a convenient listed item.
NOTE NOTE Garlic in K.F.C. is typically listed as the Lowest item on the packaging below Onion But they used BOTH Onion salt and Garlic Salt different then the Garlic powder listed below as the last item.
I have Packaged items for Retail, and NON retail purpose for Provincial sales, State Sales and International Sales, have had licensing in Multiple countries I KNOW THE LAW and have researched it back to 1905 in Multiple Countries.
Yes K.F.C. has listed items Like Pepper Salt ETC ETC BUT it DOES NOT mean Pepper or Salt are the Highest items and other could be Higher then Salt and Pepper BUT NOT LISTED or Pepper and Salt could be the EXACT amount but both listed as Pepper they listed and Salt was a mandatory listed item in which case then Alphabetical rule is in Place
so as a principle rule knowing the items in a Bag is Great BUT you can then have a guessing game what's NOT listed above below or between the listed items
