It might be worth mentioning, that except for chili powder, all of these items have been "confirmed" by KFC before. Most are on the clear photograph from KFC Japan and others have been confirmed in the Video from KFC New Zealand. Cloves have been depicted in multiple illustrations too. But again, this is controversial. So do with it what you want, but at least I am not claiming anything out of the sky here. Also, I have been using these ingredients for months now, with great success. So I am not relying on random items, stories or napkins here My thought is that Chili Powder is mainly Paprika and Cumin. Since you already have Paprika, you might consider dropping Chili Powder and replacing it with Cumin. Just a thought.

It might well be a blend of different chilis or just cayenne. Chili Powder does not necessarily include cumin and other spices. Think about it: Cumin is the lowest item by weight in a chili powder blend and Chili Powder is one of the lowest items within the H&S. This will leave you at what? 0,005 grams of cumin or so? This is not reasonable. And to avoid any distraction, I would not place Cumin as a single item. Do both if you're curious. Maybe I'm wrong. But please don't change anything based on assumptions before trying the more obvious option first.

Indeed, I managed to forget that there are Chili Peppers in Chili Powder, and it doesn't necessarily need to contain any Paprika. Chili Powder also contains garlic, onion, and salt. All potentially valuable ingredients. But I'm not sure that Cumin is the least ingredient in Chili Powder.

I reevaluated the measurements and they almost exactly match with Silver's. Again, the list is 11,9 grams short. In my assessment, this could only be Paprika, MSG or a special Salt. The argument for MSG would be, that we wouldn't exceed 11 herbs and spices. Since it is neither herb nor spice, it would be the first item not to mention when you reveal to someone a list of herbs and spices. Also, naming MSG lastly (and belatedly) as the 12th item, is the correct order after all. Would I place MSG this low today though? No. Maybe the old-timers are correct wrt quality of spices and meat etc and less MSG was needed. Paprika is possible too though. If we count Black and White Pepper as one ingredient, it wouldn't be too far fetched to consider "capsicum" one ingredient as well. It is basically the same fruit that had been bred for heat, size, colour etc. over the time. The order White Pepper, Black Pepper and Red Pepper for fried chicken proved to be very likely in many of my personal recipes as well. 3 tbs white pepper 21,60 3 tbs black pepper 18,90 2 tbs ginger 10,80 2 tbs coriander 10,80 2 tsp garlic powder 5,60 2 tbs sage 4,20 1 tbs thyme 4,20 1 tbs rosemary 3,60 1 tsp chilli powder 2,60 1 tsp cloves 2,10 1 tsp allspice 1,90 1 tbs marjoram/oregano 1,80 As a result, below is what I would add to 100 grams of flour/starch. Note: The weights are liberally rounded. WHITE PEPPER 1,000 TELLICHERRY PEPPER 0,750 GINGER 0,500 CORIANDER 0,500 PAPRIKA 0,500 GARLIC 0,250 SAGE 0,175 THYME 0,175 ROSEMARY 0,175 ALLSPICE 0,125 OREGANO 0,125 CLOVES 0,125 CHILI POWDER 0,125 I haven't yet tried this. But from the hundreds of recipes I cooked so far (I am exaggerating a bit), I can tell this is a very solid recipe and must be more than delicious... Interestingly enough. I looked at the recipe I have been building based on my theory of the Shelton Winston article. My peppers scale a bit higher into my 200g recipe. And I have been using a spice handbook for ratios and we match exactly on:
Coriander 1g per 200g Thyme 0.35g per 200g Allspice 0.25g per 200g Clove 0.25g per 200g
and I have been considering rosemary. And when I work it into the recipe it's been at 0.35g into 200g as well
So I like a bunch these numbers
For reference I have:
White pepper 3g per 200g - 1.5g to 100g Black Pepper 2g per 200g - 1g per 100g
So I am higher on the peppers
