I would try making a Gravy with your NEW recipe amounts.
The Original KFC Gravy used the seasoned flour for a rue.
The Gravy also gives you a secondary taste value to sample

To me Rosemary is a very aromatic and robust spice, and if you don't want it to totally dominate, it is best to use only small amounts.

I'm tempted to mix even ratio of thyme and savory and then thyme and rosemary. Smell them see what that yields. And ya maybe make a rue out of each of those combinations to see if something is overpowered or tastes off

I had posted 3 things I liked about this recipe and amounts.
Roughly 13g short Ratios of H&S line up to poultry dressing recipe I worked "less is more" against 100g recipe contains 20g and 10g items
But the 4th one for me is the story that CHS detected the cheaper brand of Ginger. If that story is true, it would make sense that it needs to be of a higher weight than I have ever given it.
Also if CHS gave the recipe for 100g to WS in no way do I believe it would have been 10.8g of this and 2.1g of that and 3.6g ... They would have been even numbers, no fractions I think. Therefore I need to work on the rounding a tad more.

I am glad you like the idea and engage vividly, but I don't know why you mix this up with the WS story. It is very possible that one of the items here is actually at 13 grams, maybe Ginger or Coriander. But why would the handwritten note be short of an item? Just because CHS forgot it in his conversation with WS, it must now always be missing? Why would they even keep an incomplete note? We already have 12 items here and it is safe to say that it does not include MSG at this point, because then both the amount for pepper(s) and MSG would be far too low. So maybe this is a pre-MSG recipe, or H&S-Only recipe. Again, there is no shortage of 13 grams in my calculations. I agree that we would need to work on the rounding though.

What I am suggesting is there is additional salt added to what you posted that would total 13g to get us to an even 100g.

white pepper 20,00 black pepper 20,00 ginger 13,00 coriander 10,00 sage 10,00 garlic powder 6,00 rosemary 4,00 thyme 4,00 marjoram 4,00 chilli powder 3,00 cloves 3,00 allspice 3,00

What I am suggesting is there is additional salt added to what you posted that would total 13g to get us to an even 100g. This is a good thing Why would there be Salt at 13 grams? That is 1 or 2 grams per 200 grams of flour. Think about it. And it would also reduce the weight of the other items, because you now don't have 100 grams for 12 items, but 87.

The 1 or 2 grams of salt per 200 grams of flour is considered to be the 'extra' Salt that is in the 26 ounce bag, per its ingredients list. It is Salt that is in addition to the 3 Lb. Salt box. It may have been added to the bag (initially at least) due to its preservative potential.

Alternately, the Garlic within the 26 ounce bag is in the form of Garlic Salt.
