I think Garlic Salt is roughly about 1/5 to 1/6 Garlic Powder and 4/5 to 5/6 Fine Salt (by weight).

Again, there is a chronological inconsistency here I'm afraid. The OR and the handwritten note are much older than any corporate packaging and most would agree that the recipe had been changed. So I do not get why you want to squeeze the OR into Corp bags? Isn't that anachronistic?
If you look at the actual weights here, this doesn't seem to be a commercial manual at all, rather the most basic recipe for home or small restaurant use. Maybe even his very own final note with last adjustments. This would explain the strikethroughs.

I just want you to understand. If this is genuine, it is older than the Corp, thus none of what you have taken into consideration so far would apply. You know the famous saying: Think outside the bags!

I would bet additional salt. Garlic, seasoning or otherwise has there before the 26oz bag

I weighted every single item myself now, using regular 'european' table- and teaspoons. I just don't trust these conversion websites anymore. The recipe looks very neat and solid. The higher amount of Ginger is the only surprise here. I used the same amount of Ginger and Coriander before, just like most I guess. But like I said before, Ginger is the densest item of all and if CHS used the same amount of tablespoons, it must be much higher in weight than Coriander. But that is just a guess of course. But I have at least two ingredients with 2 tbs each in the list, and I don't know if any other pair would fit better than ginger and coriander. This is the formula I have now mixed and which I will try in the next couple of days. 18,50 white pepper 18,50 black pepper 15,00 ginger 12,00 coriander 10,00 sage 6,00 garlic powder 5,00 rosemary 3,50 thyme 3,50 marjoram 2,75 chilli powder 2,75 cloves 2,50 allspice I will start with 4 grams per 100 grams of flour and work my wy up if necessary. The breading smells delicious and very well balanced. This sums to 100!

Silver The chicken was not bad. Maybe a good starting point for some. But it wasn't spot on, I have better recipes.

@eastfrisian, how many grams of mix did you apply to whatever grams of flour you added it to? Did you get the Salt high enough to be at a KFC_like level? Did you stick with no MSG, or was some MSG added?

I reevaluated the measurements and they almost exactly match with Silver's. Again, the list is 11,9 grams short. In my assessment, this could only be Paprika, MSG or a special Salt. The argument for MSG would be, that we wouldn't exceed 11 herbs and spices. Since it is neither herb nor spice, it would be the first item not to mention when you reveal to someone a list of herbs and spices. Also, naming MSG lastly (and belatedly) as the 12th item, is the correct order after all. Would I place MSG this low today though? No. Maybe the old-timers are correct wrt quality of spices and meat etc and less MSG was needed. Paprika is possible too though. If we count Black and White Pepper as one ingredient, it wouldn't be too far fetched to consider "capsicum" one ingredient as well. It is basically the same fruit that had been bred for heat, size, colour etc. over the time. The order White Pepper, Black Pepper and Red Pepper for fried chicken proved to be very likely in many of my personal recipes as well.

As a result, below is what I would add to 100 grams of flour/starch. Note: The weights are liberally rounded.
WHITE PEPPER 1,000 TELLICHERRY PEPPER 0,750 GINGER 0,500 CORIANDER 0,500 PAPRIKA 0,500 GARLIC 0,250 SAGE 0,175 THYME 0,175 ROSEMARY 0,175 ALLSPICE 0,125 OREGANO 0,125 CLOVES 0,125 CHILI POWDER 0,125
I haven't yet tried this. But from the hundreds of recipes I cooked so far (I am exaggerating a bit), I can tell this is a very solid recipe and must be more than delicious...

It might be worth mentioning, that except for chili powder, all of these items have been "confirmed" by KFC before. Most are on the clear photograph from KFC Japan and others have been confirmed in the Video from KFC New Zealand. Cloves have been depicted in multiple illustrations too. But again, this is controversial. So do with it what you want, but at least I am not claiming anything out of the sky here. Also, I have been using these ingredients for months now, with great success. So I am not relying on random items, stories or napkins here
