My neighbor and I planted a herb garden this year and you should check out thai basil ...anise flavor and that peppery flavor. Your welcome.

I grow Thai, Purple, and Cinnamon basils. Thai is the best and is used in all of my recipes. There was a type of Thai basil grown in the South during the early to mid 1900s. It is a prolific grower, and would be cost effective to use IF YOU GREW YOUR OWN SPICES AND HERBS. Did CHS grow his early on?

My neighbor and I planted a herb garden this year and you should check out thai basil ...anise flavor and that peppery flavor. Your welcome. This is awesome as I think it is a great initiative to start with a mini herb garden. One do not need to go outside in order to purchase herb. As I also used to grow coriander leaf in front of home.

Did Lumpy ever post more findings from the posting ?
The posting he did was 100% on track and NOT sure what happen to his research.
from 1950's CHS often said similar things and on Gloria P show Radio show admitted that the Herbs were from one source being on combined spice of 1930's there were Herb spice mixes also.
Chili Spice was also one of CHS Top Spices of 1930's in the 1930's prior to KFC and when CHS has made attempts for KFC chicken CHS ran a Major Kitchen, Cafeteria where he cooked a favorite Chili for people as Chili stands were a BIG deal it was a one bowl meal. BUT CHS often said that chili spice was a important versatile spice

Interestingly enough I have done a bit of work based on the above post.
Lumpy had posted his clone version of Sexton's Poultry Seasoning as:
2 tsp Sage 3/4 tsp Coriander 1/2 tsp Allspice 1/2 tsp Ginger 1/2 tsp Thyme 1/2 tsp Marjoram 1/8 tsp Black Pepper 1/8 tsp Savory
I had proposed based on the above recipe OR could have started out as:
5 teaspoons of Sexton's Poultry Seasoning (recipe does make 5) 2 1/2 teaspoons of White Pepper 2 teaspoons of Black Pepper 1/2 teaspoon Seasoning Salt (Garlic and Onion) 1/2 teaspoon Cloves 1/4 teaspoon Cayenne Pepper 1/8 teaspoon Savory
This would be added to ~2 cups of flour (flour, leveling agents, powdered egg or whatever you like) 6-8g of MSG approx 48g Salt
Based on the posts you made about Red Pepper & Cayenne and Chili Pepper. I considered it could be 1/4 teaspoon of Cayenne mixed with 3/4 teaspoon of paprika?

Great job Red Pepper and Cayenne is Sweet Bell Red Peppers and Cayenne but either way great Job Cinnamon and Ginger is in the OR have you listened to the Marion Kay Christmas party where CHS spoke in 1973 CHS says Marion Kay has the Best Cinnamon and Ginger and I know CHS used digs like that as a slap in the face to the KFC Brown & Massey. The Christmas party was a closed Christmas Private party. CHS was NOT shy with his chewing out ANYONE. Massey wanted to FIRE CHS many times. CHS said Cinnamon and Ginger for two reasons. Bill S from Marion Kay was securing contracts with the companies that had the Great Spices from the 1930's and what He knew CHS uses as he wanted to corner the Market to force KFC to use his 99x and By securing the contracts he had a shoe in for supply. Marion Kay used Saigon Cinnamon and Jamaican Ginger plus Bill S had secured deals for the Tellicherry Black Pepper. Bill S knew that There was NOT enough Tellicherry Black Pepper for KFC demand. KFC had a major issue with Black Pepper, White Pepper source. CHS knew that using two different suppliers were required for the Black Pepper as he had a shortage issue in 1940's Claudia often said that she always worried about spice shortages and she said Harland always knew what to do. look at the Must use Ingredients list I posted I will be updating it and showing that CHS used the spices Lawry's Seasoned Pepper is a delectable blend of black pepper, sweet red bell peppers and spices. if you have never used it check it out?

I have Ginger in the above recipe as it's part of what was in Sexton's Poultry Seasoning. I think one of the rare Poultry Seasonings to have ginger in it. I have not considered Cinnamon yet. I would expect there isn't much 1/4 teaspoon using the recipe I proposed above?
I made up a batch of the above. I will half it and then add 1/8 teaspoon of Cinnamon to the second batch as a test.
I do believe early on he probably used commercial seasonings like Sexton's Poultry Seasoning. But before he started very far into the franchising he most likely would have wanted to avoid using them for licensing and other reasons so basically reverse engineered them into individual whole spices. But hey, I could be wrong
