if you look at all most of the 1930's Spice Jars or Tins they ALL listed there ingredients
The 1906 Laws were NO JOKE about listing ingredient's. They fined almost ALL the spice makers from 1910 to 1925 for violations and the Spice makers did not jerk around like now with ingredient's on labels
so reverse engineering any spice was easy for CHS.
Back then they knew better then Play with the regulators remember SPICES were worth more the Silver in Trade, and they smuggled silver around the world to trade for spices
Coriander, Celery, Garlic, Onion are ALL listed in KFC corporate documents

I had this mixture sitting for a coupled days so I made up a half dozen wings tonight. At this point I haven't introduced Cinnamon yet.
I think I would reduce the Salt some. I know there is a lot of Salt in KFC but I felt it could be brought down. I try not to eat heavy salt items so I may be more sensitive. I'm thinking closer to 40g than 48g. Don't remove too much.
A bit more after bite on the pepper than I remember. Again, not a whole lot but just a pinch too much. So 1/2 teaspoon less of pepper (question for me is it the white or the black pepper that I should try bumping down a hair.
Deepfried101 - Would you tend to think the after bite pepper heat is more from the black or the white pepper? If you ever get a chance to give this one a go with those slight adjustments (and cinnamon) it would be appreciated.
I will try a version with cinnamon but it may be awhile

The White has a typically more long taste bite
try dropping the white down.
I always suggest Salt to Taste NOT by weights and measure's.
it depends on the Peppers you are using you might want to drop both a little and then level out which you prefer. We have a preference for the White pepper and Pepper over-all so we go heavy on both.
Taste both of your peppers on your finger or mix it with a little water it will tell you which has the bite

Can an authentic hot Hungarian Paprika be used in some fraction of the overall peppers whereby to quasi-replicate the noticeable pepper taste of KFC fried chicken?

Not sure about Hungarian Paprika but it would be worth you trying. I cooked the recipe I worked on based on Sexton's Poultry Seasoning and I had a bit too much pepper after taste. So with just White and Black pepper you can get the KFC peppery flavor I believe. I really like the taste of some black pepper I got at Costco (Canada). The smell alone I like. In the recipe I posted above I used 1 1/2 teaspoons of it and 1/2 teaspoon of cracked Tellicherry (McCormick's). My White Pepper was a generic brand and between the 3 I had a bit too much pepper after taste. Just a smidge. The variable in all of this is the type and quality of pepper(s). I firmly believe someone could cook my recipe and say not enough pepper. Where as I think I could remove a 1/2 teaspoon.

Kirkland Brand nothing about Tellicherry. On the back it says distributed by Costco (Ottawa). Product of Vietnam. 340g container. I don't even move it to anything smaller as I use it on everything I like it so much.

If they meet the Tellicherry diameter requirement, they are Tellicherry by definition. I think this issue is way overblown.

Tellicherry is a Larger Peppercorn which is true BUT that extra maturing time does give it a Different Taste. Yes there are other Countries which have Large Peppercorn and they are great.
Tellicherry is still one of the few that has a more unique flavor. To many it is NOT noticeable. To someone who knows spices there is a HUGE difference.
I Do NOT recommend people going Crazy for just Tellicherry if they cant find it. BUT if they Can find it and afford it I will always suggest it as it's a preference for myself
The Asian markets stores have been bringing some VERY good Peppercorns in over the last 3 years and The Butcher supply houses have GREAT pepper.
