I tried Fenugreek. It is the most overpowering spice I have ever used, even more so than cumin and clove. I ended up using such a tiny amount. I personally actually like the taste of Fenugreek (which is more than I can say for cumin and clove), but even at small amounts I didn't think it was benefiting my recipes. Still doesn't change my opinion at all. It is definitely not more overpowering than cumin, or clove. Maybe about the same, and when it does overpower, it overpowers in a less noticeable way than cumin/clove would. You only need 1/8tsp - tad under 1/4tsp to 350g flour. Just because a spice is strong and can overpower a recipe in excess amounts doesn't mean it's not in the recipe, it just means you used too much. I was using 1/16tsp of Fenugreek to 2 cups of flour. Only then the flavour was becoming manageable, but still prominent. Clove, I normally use at 1/8tsp. I am so against Cumin that I haven't used it in such a long time that I've forgotten what I used, but I remember it dominating at similar doses to what I had been experimenting clove at which would have been 1/8 or 1/4 tsp. It's fine for you to disagree.I wish you luck. I think too many of us going down similar paths is actually a big problem with this hobby, so in my opinion, I think it's great that some people are exploring in their own way.

Tbh, i'm over the Nigella seed. It is not that important anyway because the flavour that it brings is subtle, but at the same time when i tasted a single seed off turkish bread for the first time, my brain straight away associated that taste with kfc. So even tho the flavour is subtle, it still cemented that flavour into my brain, and my taste was spot on because i discovered it on the modern O.R. If it weren't for the black vial that matches nigella seed perfectly, and the fact that they put it on vial C after B which can hint at "bc" "black cumin" then i wouldn't even care that much about it. Maybe the black vial and the "bc" is purely coincidence. I have discovered the Nigella seed on another fast food tho, i discovered it also on dominoes bbq chicken pizza and they have larger specs of it on the bbq chicken pieces, so maybe just some common spice used by fast food for texture and cheap flavour. I considered and tried Nigella for a while too. It tastes peppery and seems to fit. I have the same problem with Nigella as I do with pepper. After cooking, the taste isn't there.I think this is why Nigella works good in bread, because dough needs to be cooked at low temperature to form everything into bread, and at low temps, the taste isn't lost. Frying ruins that.
