After all of these years, I've decided that I don't like the "warming" spices, such as coriander and nutmeg. When critiquing my recipes, the aftertaste of these ingredients always drew negatives. The only proof, or evidence, of coriander, I've seen has been the Glen videos, 99X, and Sexton's. Even Glen voiced the skepticism some have about coriander. Coriander, cinnamon, nutmeg or mace, are not in Ledingtons, and nutmeg is not listed in any other of these sources I have listed. CHS was seen grating nutmeg into gravy. Was it not already in the chicken seasoning mix? I've always maintained that KFC had the aroma of thanksgiving cooking, and at times, Mexican restaurants. I think we have spun our wheels enough, or at least I have.

A poultry season definite has the key spices aroma.
In the Bags you have the pepper and sage are the most aroma you should NOTE

I can hold up the Vial photo, and the Ledington note, and enter into a debate. But I can't hold up hearsay or opinion to debate. I've always maintained that somewhere along the way, all or most of the OR had to have been revealed. Words and opinions don't work for me.

KFC states that the original recipe was written above the door of Colonel Sanders restaurant in the 1940's, in plain sight where anyone back then was welcome to read it.

The bottom line is that if we mythologize and thereby denigrate and dismiss this snippet of potential truism, then we might as well mythologize and thereby falsify everything that our inherent confirmation biases lead us to accept as factual and thereby true from that same era. We can't merely cherry-pick the data based upon proof (or lack thereof) in one thing without doing likewise in all things. Or as the legalistic Roman's who etablished the foundation of our jurisprudence might have said, "falsus in uno, falsus in omnibus".
