Here’s an image of the fruit being harvested. The flesh on the outside, and the nutmeg in the center, which is encased in a lacy covering. That bright red/orange cover is called mace.

I've tried searching, and although it is easy to find whole nutmeg, I can't find any sources who offer whole nutmeg for which the mace component is still present.

Wow, I’ve never seen it sold like this. Is this really what you are referring to DF101? Or did you just mean whole nutmeg like everyone else is familiar with? If so. Can you post a photo of the nutmeg you have in house and the source? I’ve never seen it dried together like that. Awesome. Thank you maceme!

Maceme. Are you able to run the whole piece on a microplane or does the mace just flake off of the nutmeg? Doesn’t seem very stable/ attached to the actual nutmeg. Seems like it would just come off and you’d have 2 things you’d need to mill/grind separately.

Jamaican Nutmeg is what we use
if the Mace Blades are large when plane we just pulse grind it smaller.

The nutmeg to mace weight ratio must be on the order of 10:1 to 20:1.

I grate it together when the ratio doesn’t matter, like on top of coffee, and the mace does loosen and isn’t the same uniformity. For a weight based recipe, separate seems best, as it is more reproducible. I find etsy is a good place for top quality, less common herbs and spices.
