I was perusing the 'other forum' a bit with regard to 99-X, and at one time (circa 2017?) Ken was advocating (presuming that I was reading him correctly) the addition of 19.5 grams of 99-X into 150 grams of flour (plus adequate salt) whereby to bring it's taste closer to that of KFC OR.
That's the equivalent of adding 26 grams of 99-X into 200 grams of flour (plus adequate salt).
99-X must be more than incredibly dull tasting and weak.

Additionally, the gent to whom Ken advised the above stated flat out that 99-X is not as good as Dustin's recipe.

The original 99x had less than 11% salt. So that’s where the 2.65oz of salt and or garlic salt comes from. Today 99x contains around 5.5oz of salt. Yet is still 25oz overall. I’d guess that extra salt used to be something else.
I suspect not only was one or more ingredients removed. But also others were reduced some as well. Likely to balance the taste of the recipe.
I think you need to put back ingredients and amounts roughly 2.75oz. Then you need to find what the other .5oz 99x never contained was if you want the 50-60’s OR

Ken also mentions that real KFC H&S mix is ground rather fine (sans for the Black Pepper chunks), whereas 99-X is very coarsely ground. He (again, with the presumption that I'm understanding him correctly) seems to infer that in his experience grinding 99-X into a powder more similar to KFC in fineness actually releases more of it's flavor.
An easy test to verify this (for those among us who actually have 99-X on hand) would be to cook it at 17 grams in 200 grams of flour (plus salt) "as is", and then cook the same, sans for grinding the 99-X to a powder first, and then doing a side by side taste test.

Apparently the 80's lawsuit has ruined 99-X. The only way to discover what earlier 99-X tasted like would be to find an unopened bag of it, whereby to cook it.

This makes me think that scaling on the order of the 40 ounce bag level (for the use of exclusively natural H&S, devoid of extracts and other tricks, such as I+G, injection, etc...) may even be somewhat on the low side of that which is actually required when no artificial means of flavorant boosting are employed.
It's surprising that the very same Ken who determined through direct tasting experimentation that 99-X needs to be a pinch more than doubled has otherwise remained a strict adherent to the 26 ounce bag.

I will Indicate this Issue with spices that has been reported BY multiple Agencies.
It has been Found that the majority of Spices and Herbs sold NOW are containing a minimal of 25% fillers weakening the True Taste of the Item's.
We have Had Recipes that we have used for 50 Years in catering and they ALL have been adjusted to the Poor Quality Spices and or went to As much PURE organic Spices and Herbs as Possible ( which Kicks the pocket Book )
99-x is extremely weak ( I would be curious to Try Marion Kay Breading flour which contains the Pre-Mix of Flour included in the Flour like Grace's Perfect Blend Sells ?
What's even Funnier is I have suggested Mixing the Spice and Herb Blend people Make at Home with More Spice and Herbs and everyone says USE less BUT Marion Kay everyone complains is weak and I agree with Ken 20g is required of Marion kay or more to season flour.
The major issue also with Home made Spices and Herbs and using exact recipes between different countries or States Provinces etc etc unless we are using the same spice and herbs The flavor can Vary
