1974 Esquire Magazine
I know this is a contentious Issue with Some People speaking about the 1974 Esquire Article.
Many People Have Wrote 3 of Men were Bum's and NOT Cook's just snobbish Food Critic's.
All I have to SAY it THIS AGIAN
These so Called MEN had over 150 Years of Food and Cooking related experience and Sold also 10 Million Cook Books over a life time, plus articles.
They All would Have ATE the Original K.F.C. Chicken many times over their life time and Knew taste of items including wine.
Now they ALL Did NOT have a clear 100% conscientious of ingredient's BUT what they Did have was a Knowledge of Food Taste and Flavor's and Knowledge of what Items were available around the 1940's to 1970's.
ALL I have to comment is OPEN YOUR EYE's and Take a Look at what they said " Use it Don't Use the Ingredient's"
You can Just take Dustin aka Ken's advice and add 13 grams of Garlic Salt that's the Missing 13 grams Winston spoke about ?
How is it that 3 Independent people out of 4 who wrote articles without Knowing the others were also asked to write a article said Cinnamon ? I also think the Chines reverse engineer also Mentioned Cinnamon ? BUT they are ALL WRONG

My best to date recipe #17 with Cayenne (which explodes with the note, and might fool many) hits on:

This has inspired me to tweak my recipe #7 with quantities more to my current liking as follows:
200. g. Pastry Flour 30.0 g. Salt 7.50 g. MSG 3.00 g. Black Pepper (1/2 Fine, 1/2 Medium Coarse) 2.50 g. White Pepper 1.35 g. Coriander [1] 1.25 g. Celery Seed [2] 1.15 g. Allspice [3] 1.00 g. Ginger [4] 0.75 g. Chili Powder [5] 0.50 g. Sage [6] 0.25 g. Savory [7] 0.25 g. Tarragon [8] 0.25 g. Ground Dried Orange Rind [9] 0.13 g. Thyme [10] 0.13 g. Marjoram [11]
20 grams = 40 Oz. bag compliant
Note: Back then I was not adding Garlic. Note that not one of Esquire Magazine's experts detected Garlic. The item that was most identified in common among them was Cinnamon. Allspice is said to taste like a blend of Clove, Nutmeg, and Cinnamon.

There were More extracts available PURE in the 1930's then Today.
Extracts of the 30's Orange, Lemon, Lime in Rhine Powder, and liquid were available for the Pharmacy and Soda Locations and retail.

Yves insisted that the "cinnamon" taste was allspice. He also was sold on orange zest. Shortly after experimenting with orange zest (and za'atar) he declared he had found the recipe and disappeared. He was French Canadian and used broken English, kind of like deepfriednew101.

I have NEVER once said to use Orange Zest.
I'm saying that C.H.S. mentioned Cinnamon and Bill S from Marion kay had the Best Cinnamon and Ginger of the time.
3 out of 4 requested authors of there taste experience in the esquire Mention Cinnamon and the Chinese mention Cinnamon.
I will reference the Museum which shows Jamaican Allspice, and Jamaican Powdered Ginger,
Don't Know Yves Sorry smallgree and implying I have links to Yves or any other similarities is ONLY a coincident BUT please Do Not think I reference the use of Orange Zest in the recipe or Vanilla either, and PLEASE DO NOT reference that I would be Yves either as I'm NOT.

I was just making conversation. My only observation of you, which I clearly stated, is that you use the same broken English as Yves did. Yves was/is my friend. He is the only person to which I mailed KFC seasoning, and my chili seasoning. I never tasted orange and instead used lemon zest. Yves and I disagreed on this issue.
