Ok so I have real KFC maybe 2 or 3 times a year. Had some tonight from a remodelled but original store by me. No not even a hint of a KFC note smell. Zero at the store Chicken had a more orange tinge than I have ever saw. Not the normal brown Zero KFC note smell in the bucket. I’ll keep it overnight to confirm. Greasy as you’d expect Zero no KFC note. To the point it was a far cry from it’s original state Not much pepper taste even. I found a under cooked hidden breading where I could taste pepper but nothing else People building OR recipes on todays KFC with .0675g grams of herbs are off track. There isn’t that much I will say this from a owner stand point of Restaurant's after renovations you loose staff typically If this location lost staff and Failed to teach staff the importance of sifting the Breading Flour YOU will get exactly what you described as a cooked chicken. NOW I'm NOT saying NEW AGE KFC has not gone to crap. Personally I would contact the Location and request replacement of the item comp, and ask when are they making a FRESH batch of chicken with NEW flour spice combo. Then try the item, A renovated location should have a Perfect clean kitchen with perfect equipment so then its staff and Product that will be left suspect. A local A&W just renovated in our area and We went for one of their Teen Burgers to support local other businesses IT WAS one of the BEST A&W burgers ever had and when I spoke to the manage congratulating on opening and remodel was told they had a 1 week training on ALL staff and ALL new food stock obvious a BIG help to quality

Just a NOTE also KFC NEW are now mixing the Salt into the Seasoning Bags in Canada and since they started this Process the Quality has DROPPED way down.
Just a excuse to use more extracts and less real Herbs and Spices.

I Do Not want to be accused of defending the NEW AGE KFC for the lack of Great Food
I wanted to Point out what I see as the Major issue from experience
I find lack of training is a issue and The lack of resifting the seasoned Flour New Age people will NOT understand.
KFC university is NOT like the C.H.S. cooking lesson I received from a True Master and Person Who had a passion for cooking
The failure to re-sift the Seasoned Flour becomes a under seasoned Tasteless Cooked Dough ball. As for Opening the Equipment at a below 270 degree temp YES makes Greasy Chicken BUT THE NEW AGE equipment cannot be open until the cooking process finishes and Times out electronically. The NEW AGE equipment is Idiot Proof if properly set, NOW if the set the Program for 1/2 the Prescribed Chicken and loaded the racks to full capacity and set for 1/2 Bird weight it will be a shorten cook time and NOT properly cooked.
In either even its Employee issue more then product

Just a excuse to use more extracts and less real Herbs and Spices. This could be a good clue as well. What I also noticed was not as salty as before. I noticed last time I got KFC months ago too. It had more flavor than this batch. But the salt also was lower. Everyone remember how much you drank during and after a feed? Couldn't get enough fluid into you. LOL Single beer tied me over.
I may and I say may. Buy a 2 piece from our other location that isn't mall KFC. To confirm it's not just this location.
I will post pictures of the cold chicken if I get a chance to show the color.

Sealed in a plastic container delivered a faint note smell next day. Taste was the same. I did find a hint of an Allspice coming through in one piece. Whether allspice or a blend tasting like it who knows. But was happy to taste anything. Zero herb taste

I've been tempted to cook one of my latest 5 ingredients (beyond B&W Pepper) recipes with zero herbs whereby to see if they really aren't necessary to the 'note'.
We are certain that (due to a court order as a consequence of a lawsuit initiated by KFC) Lee's Famous Recipe must comply with the above. And potentially this same injunction applies to others as well. 99-X? Grace's? Etc...
We know that Graces has 8 ingredients, with 2 of them being B&W Pepper. That means it contains only 6 H&S ingredients beyond B&W Pepper...

May even capture the elusive 'note'. 200. grams Cake Flour 30.0 grams Baker's (aka, Flour) Salt 7.50 grams MSG 0.50 grams Dextrose (or 0.70 grams regular Sugar) 2.60 grams White Pepper 2.60 grams Black Pepper (Medium Coarse) 1.375 grams Coriander Seed [1] 0.75 grams Cayenne Pepper [2] 0.30 grams Nutmeg [3] 0.25 grams Clove [4] 0.125 grams Star-Anise [5] Edit: This might even exceed the flavor of flg 's latest disappointing real KFC OR adventure.

My Math tells me that there are 8 grams below with Pepper and 2.8 gram of the (1)-(5) or 35% of the 8 Grams while the Pepper is 5.2 Grams or 65% of the 8 Grams
2.60 grams White Pepper 2.60 grams Black Pepper (Medium Coarse) 1.375 grams Coriander Seed [1] 0.75 grams Cayenne Pepper [2] 0.30 grams Nutmeg [3] 0.25 grams Clove [4] 0.125 grams Star-Anise [5]
I may suggest that the Pepper is a Great Amount and Will Give you the NOTE and Taste of the Pepper it will Out Take the 2.8 Grams of Other Items easy and would suggest that you increase the (1) - (5) Total higher or Double the Mix and add it to the Pepper making the (1)-(5) 5.6 Grams mixed with 5.2 Grams of Pepper to Give the (1)-(5) a chance for flavor and Aroma
This is ONLY my suggestion Person You can try your recipe first and see the results which is what I would recommend Personally I Do Not see 2.8 Grams of Seasoning making any flavor in 200 Grams of flour
