OK they are called "tatters" or "wedges" around me. We have chain called Mary Brown's that seasons theirs with the same seasoning as their chicken

My last cooked recipe didn't express a salt nature at all. The Akron, OH 'Showcase Meats' Chicken boldly expresses salt. A huge difference and a major flavor booster favoring salt, IMHO.

flg , I think you nailed it when you stated that when the group consisting of Salt, MSG, B&W Pepper, Coriander, Ginger, and Allspice (and/or Clove, Nutmeg, Mace, and possibly Cinnamon) is right the herbs merely play a background roll of subtle flavor improvement. At this juncture I'm willing to speculate that a very good to excellent deep fried Chicken can be achieved before even introducing any Herbs.
The 'Showcase Meats' deep fried chicken lacks the (presumably) Red Pepper induced lingering 'pepper bite' of KFC, and it doesn't seem to have any Herbs, but it is as good as, or even better than, KFC OR. Better in my opinion.

5 ingredients beyond B&W Pepper, zero Herbs, and a lot of Salt. My first guess for a 'Showcase Meats' like Deep Fried Chicken.

There are Better Tasting Fried Chicken World Wide.
The nostalgia of the K.F.C. the Original Grown up upon and Loyalty to many.
K.F.C has that something other Don't have and NOW its more something most DO NOT want to have because of the Quality Drop.

Season your Food most places don't season there Fried Chicken Enough that was spoke many times in the 1960's in Canada ?

I bet that makes good chicken
I really do think any balanced poultry seasoning fills that herb block fine. I think the top end for 200g of flour is roughly 1.5g herbs. Other than marketing. His secret really is he used way more salt and pepper than traditionally used at the time in fried chicken.

Add 0.25 to 0.50 grams of Cayenne Pepper if you desire a lingering Pepper bite.
