Well local within about 20 miles at least, and from the place touted as serving the very best deep fried chicken in Akron, OH (which includes KFC).
It had many of the qualities of KFC OR, and some better qualities. But the biggest thing I took away from it was that it is much saltier than my Chicken, just as for real KFC OR. The next thing was that it didn't seem to have any Herb nature, and it assuredly didn't have any Oregano nature. It just fell short of KFC OR as to lingering Pepper bite. I could taste the Coriander nuttiness. It had the thick sort of greasiness and soft crust of earlier era KFC down to a tee. As well as earlier era darkness. Brown as opposed to sickly looking yellow/brown. Definitely more Maillard induced flavor.
Based upon this experience, none of us are likely getting adequate salt into our chicken. It's assuredly more important to the outcome than Herbs.

In your opinion, was it a brined saltiness or an injection brine? Were the bones soft?

The difference makers always come back to correct level of Salt and Pepper. Correct level of coriander and (allspice, nutmeg, clove, cinnamon) or whatever combo you use for that block.
I think any balanced poultry seasoning can fill in the other gaps.

I'm thinking that it's fried in some type of shorting rather than Soy or Canola oil. Lard? Beef Tallow? Palm Oil based Shortening?

Some of the smaller bones around the kidney section of the Thigh pieces were easy to chew up and swallow. Ditto for the wing tips.

Is it possible that retail business can acquire the same birds as KFC? Imo,it makes perfect sense that an abbatoir (sp.) process their birds the same way for everyone.

The saltiness level makes me want to bump up to 34 grams.
