Spice companies were mixing CHS's stuff before he sold out. It would have been near impossible to mix in house after enough places started selling. It appears the company that made the seasoned flour that DF101 posted. Milled enriched self rising flour. I wonder if he had the premixed H&S sent to them. And they just mixed it into their flour and packaged. Or, did they also mix some of the H&S?

Yet another path to 16 grams (= 32 ounce bag compliance) 200 grams Pastry Flour 30. grams Salt -------------------------- 2.5 grams MSG 2.5 grams Black Pepper (1) 2.5 grams White Pepper (2) 2.5 grams Salt 1.2 grams Sage (3) 1.2 grams 5-Spice Powder (4),(5),(6),(7),(8) 1.2 grams Coriander (9) 1.2 grams Ginger (10) 1.2 grams Paprika (11) Sum = 16 grams
We know that 5-Spice is a component of Jolibee's Chicken Joy. We also know that Jolibee is the fastest growing deep fried chicken chain on a global scale.

This rather odd "5-Spice" mixture would solve the "it seems to be missing about 5 ingredients" mystery for the Settle's recipe: www.mccormick.com/gourmet/spices-and-flavors/minis/spicy-szechuan-5-spice-seasoningIt has many of the goodies which we might be missing in our recipes. And we know that McCormick was involved in KFC OR formulation. But despite being called Szechuan, it contains zero Szechuan Pepper (or for that matter, Black/White Pepper).
