I dropped the Cayenne Pepper and boosted the Black Pepper to hold the line at 11 H&S.
My old way: 6 grams B&W Pepper 0.3 grams Cayenne Pepper
6×7,500+.30×40,000 = 57,000 relative Scoville
My new way: 7.5 grams B&W Pepper
7.5×7,500 = 56,250 relative Scoville
Pretty close...

Dustin's recipe (as seen on Glen & Friends Cooking) scaled to 200 grams of Flour:
4.76 grams B&W Pepper 0.59 grams Cayenne Pepper
4.76×7,500+.59×40,000 = 59,300 relative Scoville
A bit hotter than where I'm at...

Based upon 60/40 the B&W Pepper could be:
4.75 grams Black (60%) 3.15 grams White (40%)
Sum = 7.9 grams
Relative Scoville = 59,250 grams
