Do we need to know what size external salt bag was used with each of the bags above to know how much is in 40, 32, 26? Yes! That plus the introduction date for extracts, the dates associated with the expansion(s) of the use of extracts, the date when Paprika was removed, other recipe alterations over time, etc...

The spice bags changed BUT the Salt remained around 3lbs to 25Lbs flour
I look at this way the amount of extra salt used as a carrier in a 26, 32, 40 Bag is not relevant when your adding 3.lbs externally. Now others may argue it matters BUT I Do Not think it does MY OPIONION

If you consider 10oz MSG and 10oz Salt and that they were constants:
Start with 32oz first:
2) KFC 32 Ounce Bag ------------------------------ MSG - 10oz Herbs and Spices - in weight order = 10oz Salt -10oz Garlic Powder - 2oz (left of 32)
At 26oz it doesn't work if items are in weight order.
3) KFC 26 Ounce Bag ------------------------------ MSG 10oz Spices - Combined= 6 but not in weight order. Herbs Salt - 10oz
40oz would work
1) KFC 40 Ounce Bag ------------------------------ Herbs and Spices - 18oz - Obviously could be less here and more Garlic Powder MSG -10oz Salt - 10oz Garlic Powder - 2oz
So are items in weight order. Which has been my question for months now.

My Aldi granulated Table Salt averages out (in my tests) at 6.62 grams per leveled measuring TSP. I believe MSG to be ~4.1 grams per level TSP. At first (due to a lot of online data indicating 5.65 to 5.7 grams) I blamed this on the measuring teaspoon. So I grabbed a measuring TSP from a different manufacturer, repeated the test, and averaged 6.62 grams per TSP yet again.

Revising the proposed 40 ounce bag.
10 Oz. MSG 10 Oz. Salt 6 Oz. Black Pepper (2 Oz. fine, 2 Oz. Medium Coarse, and 2 Oz. Cracked Coarse) 4 Oz. White Pepper 2.5 Oz. Coriander 2 Oz. Ginger 1.5 Oz. Sage 1.0 Oz. Anise Seed 0.50 Oz. Cayenne Pepper 0.50 Oz. Allspice 0.50 Oz. Mace 0.50 Oz. Savory 0.50 Oz. Clove 0.25 Oz. Marjoram 0.25 Oz. Garlic Powder
This derivation delivers even more sane and workable quantities. And a bit more lingering Pepper bite. As before, add to 25 pounds of flour plus 3 pounds of very finely ground (as in floured) Salt.

Does 99-x or did 99-x NOT use 4lbs of salt in there preparation of 25lbs of Breaded chicken if your indicating the 3lbs salt was too low ?

One of the main questions is whether the bags went down in weight in a linear manner over time, such that the 40 ounce bag is the oldest, the 32 ounce bag is the second oldest, and the 26 ounce bag is the newest.
In that context, there is the matter of salt content because if we assume this decrease in bag weight is due to salt being decreased then that’s the opposite of what we would expect if salt was increasingly being used as a carrier for extracts. We would expect salt content to go up over time as more extracts using salt as a carrier were introduced.
There are other possible explanations for this of course.
