On a weight to weight basis 1-1/2 TSP of MSG per TBSP of Table Salt transitions into a ratio of 75% by weight Salt and 25% by weight MSG.
For a recipe built upon 200 grams of flour and using ~30 grams of Salt (from all sources derived), this would place MSG at 10 grams.
My Aldi granulated Table Salt averages out (in my tests) at 6.62 grams per leveled measuring TSP. I believe MSG to be ~4.1 grams per level TSP.

I always thought Silver you mentioned it shows approximate spice to flour ration
1oz Spices and Herb to approximant 1Lbs Flour
which was also mentioned in a Book or article ?
Old Books show true Amount of Salt vs 25Lbs of Flour

Silver
What Volume of Salt works out per 1lbs of Flour then broke down to Cups ?
Using the 3lbs salt to 25lbs flour approximate weight we see from KFC Manuals ?
then do a conversation of M.S.G.

I seem to generally weigh in at ~248-250 total grams when 200 grams are flour and 29-30 grams are Salt.

The MSG tin seen above states 28.35 grams (1 Oz.) for every 45 Lbs. of Poultry. Despite this having absolutely no bearing upon what CHS might have used, let's run with it. 28.35 grams per 45 Lbs. = 0.63 grams per pound. I've been coating 2 x 4 Lb. cut up chickens (16 mixed pieces) with a seasoned flour mix built upon a base of 200 grams of flour. 8 Lbs. of chicken x 0.63 grams per pound = ~5 grams. Thus for recipes built upon 200 grams of flour the MSG need is for 5 grams. This would seemingly establish an upper limit of 5 grams for combined B&W Pepper's, and also for bagged Salt, for use with 200 grams of flour. When scaled to 25 Lbs. of flour that equates to 10 ounces of MSG, 10 ounces of combined B&W Peppers, and 10 ounces of Salt. The 26 Oz. and 32 Oz. bags are clearly rendered 100% impossible for the case of real H&S and sane/workable/manageable H&S addition quantities. So that leaves only the 40 Oz. bag. So let's now proceed to build a 40 ounce bag: 25 Pounds Flour (which are external to the bag) 3 Pounds Salt (which are external to the bag) ------------------------------------------------------------- (the 40 Oz. bag is below this dotted line) 10 Oz. MSG 10 Oz. Salt 6 Oz. Black Pepper (2 Oz. fine, 2 Oz. Medium Coarse, and 2 Oz. Cracked Coarse) 4 Oz. White Pepper 2.5 Oz. Coriander 2 Oz. Ginger 1.5 Oz. Sage 1.0 Oz. Anise Seed 0.667 Oz. Allspice 0.667 Oz. Mace 0.50 Oz. Savory 0.333 Oz. Clove 0.333 Oz. Cayenne Pepper 0.25 Oz. Marjoram 0.25 Oz. Garlic Powder Based upon it's high degree of similarity to my very best batches, I contend that this is a completely workable recipe. Plus everything from MSG on down sums to 40 Oz. (if I added correctly). Plus all addition Ounces are sane. Plus the ingredients beyond B&W Pepper sum to 11 H&S.
Bingo? Game over?

I think in a 200g recipe 5 MSG and 5 total W&B pepper makes sense. I’m not sure where the equivalent 5g salt comes in TBH.

I think in a 200g recipe 5 MSG and 5 total W&B pepper makes sense. I’m not sure where the equivalent 5g salt comes in TBH. Think 3.625 Lbs. of 'overall' Salt in 25 Lbs. of Flour. And think 3 Lbs. of Salt in it's own box or bag. Then scale down to 200 grams of flour.
3.625 - 3 = 0.625 Lbs.
0.625 Lbs. x 16 Oz/Lb. = 10 Ounces
Etc...

and what MSG level to it you have said you liked the flavor on many attempts what MSG level ? I happen to like between 10 and 15 grams of MSG, but I'm learning that to be sky high vs. likely KFC reality.
If all of the pieces of the puzzle are presumed real (as opposed to extracts), and the puzzle has bounds delineated by 40 ounces, then my cravings for MSG are not compatible with reality.

Do we need to know what size external salt bag was used with each of the bags above to know how much is in 40, 32, 26?
