I thought this might be helpful. I do not understand why 99% of retailers do not declare and describe which type of savory they are actually selling. For me, they do not taste alike at all. It is two different herbs in my view. This is purely my personal take on the 'savories'. Winter savory - dark green
- stronger than summer savory
- tastes like a blend of Mediterranean Oregano and Thyme (3:1)
- smells sweetish
Summer savory - light green
- very floral and citrusy taste
- smells and tastes almost exactly like Mexican Oregano (I literally could not tell them apart. Maybe the Mexican online shop fooled me and sold me Summery Savory instead of Mexican Oregano. I only purchased Mexican Oregano once, so I might not be considered trustworthy on this one)
Conclusion
I really love them both. I don't know which one was used by CHS. Most people, spice dealers included, are unable to distinguish between them. This fact makes me doubt that it must have been summer savory only because the secretary and Glen said so. Maybe others will be able to shed a light on this. Until then, I guess a blend of both is a possible solution to the problem. Depending on where you place Savory in your recipe, the difference will be more or less noticeable. Since I am inclined to place savory higher than everyone else, a 1 on 1 taste comparison will follow soon.

So far I have only used Summer Savory. I haven’t seen anything on a shelf in any stores around me stating it’s Winter Savory. And Savory is damn plentiful here for some reason. Perhaps unlabelled is assumed the summer variety?? I don’t know.
I’d be interested if anyone else has both winter savory and Mexican oregano if they can verify

"spice dealers included, are unable to distinguish between them." They must not have a very good sense of smell because the difference between summer vs winter is huge to me. The winter savory smells strongly of taco seasoning or cumin. I prefer the winter type because it has more flavour. Sage is still the key player of herbs in the recipe imo, and the others just balance the sage out and give it more depth. I still remember the first time i tried sage many years ago, it was after i had experimented with the "leaked" recipe and the next thing i tried was sage, and when i saw what a HUGE difference it made to the cooking aroma, and how much more closer it was, i was sold on sage. There are actual people who doubt sage lmao..

My (unidentified) Savory smells nothing at all like my Lippia graveolens Mexican Oregano (wherein there are other types of Mexican Oregano). I guess that means it's the Winter variety. The brand is 'Marshalls Creek'.
My Lippia graveolens Mexican Oregano is amazingly floral and citrusy by comparison.

This highly valued thread now makes me want to add my Lippia graveolens Mexican Oregano in place of Marshalls Creek Savory in a recipe some time.

This is a fact about the original recipe of CHS . however , You are free to accept it or not . If you managed to get the real recipe somehow . You will eventually know what's in it and what is not .

I was just reading a blurb which indicated that Sweet Marjoram and Summer Savory are often confused. Perhaps one should consider adding one or the other but not both.

And some varieties of marjoram and oregano (same genus) are often confused - both are part of the “mint” family - while Mexican “oregano” is part of the verbena family.
