On a 'rough' sweetness equivalence basis: 0.4 grams Dextrose ~= 0.3 grams Table Sugar 2.0 grams Dextrose ~= 1.5 grams Table Sugar I don't know how this substitution might equate to darkness impact though... Agree about the darkness issue. Also recall James Villas’s view in connection with the taste tests of KFC with James Beard and others from many decades ago: "James Villas argued that the secret of Kentucky Fried Chicken is sugar: 'Real fried chicken is not sweet; this is.'” I don’t think it’s “the secret” but this very prominent food critic and author of books on fried food definitely thought sweetness was added. A high DE (dextrose equivalent) maltodextrin is also a possibility.

Unless I'm dreaming, there was at least one photographed very early bag of Kentucky Fried Chicken seasoning mix that stated 'Dextrose' as an ingredient. I wish I would have captured a snapshot of the photo, but alas I did not.

LOL. One of the better theories! Just to save people some time, I tried this specific wheat blend and it didn’t work. But I'm guessing that you had fun trying. Too bad it didn't lead to KFC nirvana though...

Signed Pete Harmon he already had 3 locations adding Colonel Sanders Chicken to the menu of there Restaurant's Pete had a Hamburger Stand and Ran with the Chicken seeing the potential. Leon Pete Harmon Purchased Shelf Spice Items from His relative's Grocery Store and FROZEN Chicken first. with C.H.S. BUT the SPICESS and HERBS were PURE SPICES not apices and herbs like Bill S. Marion Kay explained that NEW AGE started using. Quality Matters in the Better Cooking YES it depends on OUR OWN stupidity level of Correctness and Wallet depth to achieve what we want. I have told many some spices are such a huge difference recipes need to be altered example below 3 items 2 are from a Super Store Box Grocery the Tamam Brand and they are SO POWERFUL we alter ALL OUR RECIPE with there use. The Marshall Creak Brand Vegetable Flakes are Totally above ANY quality we can find and cost more while the Tamam Brand works out WAY cheaper due to amount used also. your right GET the ratios right and the ingredient right
