I took a step back and dreamed up this simplified recipe primarily as a means whereby to test whether or not 'licorice/anethole' delivering ingredients such as Anise Seed, Fennel, and Star-Anise are requisites for the evolution of the note of KFC OR. And secondarily to assess if Mace alone will work in conjunction with Coriander to evolve what I perceive to be the requisite nuttiness flavor aspect, while leaving out Nutmeg. The third thing being tested (via suppressing the entire group) is to assess the impact that reducing herbs brings to the table (wherein Glen revealed that Grace's recipe suppresses this entire group, but 99-X elevates Sage to top billing). Also being tested is whether or not Cayenne Pepper is necessary. And lastly, this recipe tests whether a Cinnamon flavor essence (present within Cinnamon, Allspice, and Star-Anise) is required in any way. Additionally, since every KFC bag reveals Garlic Powder to come in last, meaning that it must be least in weight, this recipe does also. All of these changes permit a reduction to 11 H&S without any requirement for twisting the meaning of 11.

For those who might be wondering about this, everything below the dashed line sums to 20 grams. Multiply all of this recipes gram weights by 2, and then change the "grams" designator to read "ounces" for each ingredient, and you now have a full restaurant "Lug" scaled recipe for addition to 25 Lbs. of Flour, in that: 25 Lbs.Flour x 16 Oz./Lb. = 400 ounces of Flour.
And at the same time 20 grams is transformed (as in "Scaled") to 40 ounces. And thus the 40 ounce "bag" compliance...
The presumption here being that before any oleoresin extracts and other potential flavor enhancers were substituted for natural ingredients, the H&S bag would have weighed 40 ounces when intended for addition to 25 Lbs. of Flour. Hard evidence of this presumption is currently lacking.

Least in weight with respect to the secret collective herbs and spices, or least in weight in regard to every one. In the modern ingredient list, where the secret ingredients are Al lumped together, and the product is mostly chicken, so the spices are mostly less then 2%, I think there is leeway for garlic to be quite heavy if it suits the recipe.

We have Pre-Dusted our Chicken Wings for Wing special for decades and people say they are some of the Best Wings eaten.
We have been offering a Thigh Boneless Thursday Night with the Pre-Dusted Thighs and any sauce or Dry Rub we sell Wings Seasoned with.
The people who attend Both or either one of the Wing Night and or the Thigh Thursday Are starting to prefer the Thigh more meat. we had issues getting the Amount we need and had to use Bone in Skin on Thighs LONG COOK time. Are a Hit But NOT like the Boneless Thighs .

I can already tell you that I believe the pre-dusting in Potato Flour beneficially adds to the flavor in some unknown way. OTOH, having never tried it, I can only speculate that powdered milk and powdered egg may similarly impart beneficial flavor.

If people cannot find Egg Powder of the Price is out of RANGE as it can be expensive Our wholesale price in Canada Jumped to $25.00 for a Medium Bag.
I recommend that one uses Dream Whip or a Dessert Topping Product as it contains Milk / EGG / and sweetener it also has a undertone of a Vanilla/Rum flavor base also which adds flavor.

Given 20 grams of combined H&S, how many grams of this would you allot to Garlic Powder in an attempt to evolve the essence of KFC OR?
