By Adding Salt and MSG into the 100g Recipe ?
Your Bringing Salt and MSG into a equation Which C.H.S. has NEVER added into the Original 11 Herbs and Spices.
He Gave Winston the 11 Herbs and Spices Portion to Mix with Flour
Winston Did NOT mention Salt or M.S.G. DO NOT bring those into the Equation
Salt was NOT referenced in the Tommy S Recipe and It's NOT Referenced in the Glen and Friend Recipe as the 11 Herbs and Spices either Glen even says its NUMBER 12
I Have Spoke to Winston, I have Personally Spoke with ALL of the Parties Ever involved in Each Story Ever Printed and ASKED the Questions that were NEVER ASKED.
I asked the Question about Tellicherry Pepper when Tellicherry was Spoke about and I have Talked to the Largest Tellicherry Pepper Producers on the Earth who ALL say Tellicherry is a Size Reference Pepper NON discriminate to Color as the Separators Do NOT sort the Color of the 4.25mm Peppercorns While the Majority are Black YES it also included the white and green which typically the outer shell gets chaffed off while screening size BUT the particles of the Green and White and Large Peppercorns are still present in the Packaging of the Tellicherry. YOU Still Have NOT recognized what Granulated Pure Pepper is either and How it plays into the Original Fried Chicken ?

11 Herbs and Spices HAVE noting to Do with Salt and M.S.G. and the Original recipe was NOT based on a 26oz Bag either
Winston Recipe and the Tommy S recipe are the Original Recipe formulated into % Values for Commercial Mixing and were NOT the Original Recipe Hand Written By C.H.S. BUT Guess what the Original Hand Written Recipe DOES work out to a Cross conversion of a Winston S Story and a Tommy S recipe BUT DOES NOT work For the Glen and Friends Recipe the Elu Recipe or the Joe L Claudia Recipe
I have spent Hours cross checking the Recipes to see where they are similar and where they are NOT, for reference. WHY because everyone is Going to reference those old recipes?
You keep Doing what You Do and mixing the Wrong portions and Do Not take Sound advice.

The M.S.G was NOT added into the Original 11 Herbs and Spices until the Two Handful Cumberland Boat Trip Cooking event. I have ALL the PROOF and It's in His Hand Writing. I also Know that The recipe in possession is OLDER then the Hand Written Recipe KFC NEW AGE has locked in the Vault. They Only have a Duplicate Which was re written BY C.H.S. for Brown to Give K.F.C. NEW AGE Both Brown and Massey both confirmed the Original one was not given away when sold out. it was a Duplicate wrote By C.H.S. upon request by Brown, before the Company was Sold.
I will not stand by when People are making MASSIVE MISTAKE on the recipe and NOT say they are Wrong.
I will state this again I will NOT Give out the Recipe until the AGE is determined of Document's
Please Keep Mixing BUT focus on the 11 Spices and Herbs NOT the Salt and M.S.G. (they Do incorporate the Recipe but NOT in the 11 Spices and Herbs)

The missing ingredient or the 11th ingredient which CHS added was WHITE PEPPERAug 21, 2020 at 5:06am Black Pepper was in the 10 Original Spices that was used white pepper was the 11 item used and they used 2 handfuls of white pepperSep 20, 2020 at 3:17pm deepfriednew101 on Ken's forum

I cooked wingettes the other day in a FryDaddy. The lower the temperature was reduced, the better the flavor. Deep frying for a short time the next day, or warming on low heat in a skillet, or warming in the microwave, all reduced the flavor. There is no doubt that the amounts of ingredients that CHS used were modified for the heat and cooking time in a pressure cooker. It is also likely that some of the ingredients lose flavor if cooked too long or at too hot a temperature. Did CHS change out some of the ingredients to account for the changing method?

Neither my wife or I could tell any difference between Air Frying and Deep Frying as to herb and spice expression (or crust texture and darkness for that matter). I found myself asking her again and again regarding if the piece I was currently eating came from the Air Fryer or the Deep Fryer. And before long she was getting confused and questioning the same.
Edit: It was right about then when she declared that we will likely never deep fry again.

I’d be interested in the technique you use to air fry your KFC. It is always more than obvious looking when I have tried it. Taste wise it wasn’t too far off. But I could tell side by side for sure. As I would like to air fry it more often

As I would like to air fry it more often Perhaps the Vital Wheat Glutin which we substituted volume to volume for Flour made all the difference here. The Air Fried definitely came out looking identical to Deep Fried. The jury is still out as to how Vital Wheat Gluten impacts flavor though, because I believe either the Vital Wheat Gluten or the Lecithin was way off base in flavor. I'll know more after I leave the Lecithin out.

".....here’s the catch: the 10 ingredient does stand on everyone’s shelf. but the 11th ingredient…. boy I’ll say “you got to be an early american settler” to know this spice! It was brought by early settlers..."
Anybody want to wager that the "11th" ingredient will never be revealed?

I'll make two wild guesses. Licorice root and sassafras, or filé powder, both of which I have. We'll just eliminate them at the start. Silence means it is one of them.
