They're delicious. I'll fry wings with this mix later. The note? I'm not sure anyone knows what the heck the note is. My take on KFC was always craving the next piece, and the tenderness.

Wow. Really good. I think I'll work with this recipe. No day after tasting, because I just ate all of them. LOL. I guess this is where I come up with a BS story about success, but you can't comment, or whatever. "I have it, but I can't tell because you might find out I don't". I'll post this after I cook the wings. BTW, I put brown sugar in the wash, as I've done in the past, and as Lumpy did. Really rounded out the flavor, or "note".

Back in 1974 comment the Chicken was Sweet.
When you look at many Photo's of the KFC and you taste the Bag you have pf spice and herbs they is little sweet in the Spice bag
Adding Dextrose was in the NEW AGE KFC also

I don't recall old KFC as being salty. It became that way in the 70's. The early KFC I ate had a "savory" taste, and not the herb savory as Ken contends. It wasn't salty, and it wasn't sweet, but it had a sweet character. I don't know quite how to describe it. What I cooked tonight, with some of my chili seasonings, was quiet good. I haven't yet applied it to skinned chicken, but I will. I know what I added to boost # 1 flavor to what I cooked tonight, # 2. Some will not like it.

The Salt was there in the Original KFC but NOT a Overloaded Salt.
it was a more Balanced Flavor deep into the chicken, The Red Rose coating was Great Flavor and the Meat Dark or White had NO absence of Flavor. The Bones had a Red ring around it and MANY people though the Chicken WAS NOT COOKED.
The Flavor was uniform flavor NOT the Salt and Pepper New AGE KFC now taste.
The visual of the chicken had Rubbed Herbs visual larger then the Black Pepper spec's
You rarely had ONLY the Flour taste that you get NOW in 2023.

The chicken wings I cooked yesterday with recipe # 2 is the best I've cooked. I am evaluating everything now. I used brown sugar in the egg and milk wash, which seemed to balanced out the flavors.

When you say Balanced what was it missing when you did not use the Brown Sugar

I don't know. Didn't use this recipe without the brown sugar. I think some sort of lemon is needed. My best recipes had lemon pepper, but it might be a little more complex than that.
