Black] (3) If you looked at it up to this point as: 400 ounces Cake Flour 48 ounces Salt (1) 20 ounces MSG 18 ounces Powder Milk and Egg ** 13 ounces Paprika If paprika dropped in at 13oz/g. And considering it most likely was or is an early extract for the oil soiling. He may have omitted it by accident when relaying the recipe. Had to remember that's what it was with no extracts. |

10 ounces Celery Seed (or) Coriander (6)
6 ounces Sage (7)
4 ounces Ginger (8) Where did we hear of adding 4 ounces of ginger?
3 ounces Savory (or) Thyme (9)
3 ounces Dried Ancho Pepper (10)
1 ounce Marjoram (or) Mexican Oregano (11)

I haven't done the math. If it Garlic and Celery salt at those levels are used. Do you still need 48g Salt?
For those weights, the ingredients are starting to fit.

they are external weights to the Calculation and in the era of Sheldon They were still using Milk and Egg NOT powdered sources yes they were experimenting with powdered items BUT again ifs a external add in

I believe that deepfriednew101 has stated a few times that 'total' salt is 3.625 Lbs. (down from an earlier 3.75 Lbs.). |

For those new to this, and who would like to coat ~12 mixed pieces of chicken (instead of ~600+):
1) Change all occurrences of the word "ounces" to read "grams".
2) Divide all gram weights by 2, whereby to cut them in half.
When you are looking at 200 grams (~1.5 Metric Cups) of flour, it's sized for 12+ mixed pieces of chicken (you might stretch it to ~16).

1) Mexican Oregano aka Sage
2) Caraway Seed and Coriander was a later item
3) Either Sage or Thyme - Prefer Sage
