So Lets assume 2 things CHS used Part of this recipe
Do Not Count the Salt and MSG
other items and Possibly add Claudia recipe criss-cross both into a final recipe
THIS Eula could NOT be BEFORE 1939 THERE WAS NO MSG prior to the Original KFC recipe the MSG came after the Pressure Pots then disappeared during war then returned after the 1950's
SO BS to the recipe before 1939 NO MSG the other items were before.

The inclusion of MSG is what makes the recipe a bit suspect. I'm thinking if part of this recipe is based on Eula's and what CHS used as a base. Then someone at some point played with it and at minimum added MSG.

For this recipe. Thyme, Oregano and Basil. Would it be dried (leaf) or ground for all? My best guess for this recipe is all ground. Weight wise they would all be similar.
Worked up an interesting mashup with Eula and Ledington I will share shortly.

I think the reason that Ledington is 1/2 oregano, 1/2 Thyme but 1/3 Basil. Is based on ground vs leaf. I think for Ledington thyme and oregano are leaf and basil ground. That would make them closer in weight

Remember in the 1930 they had Ton's of spice and herbs RUBBED
The rubbed spices and herbs were shaker or sifter broken down by doing this method they found the residual oils were more volatile in the aroma and the larger particles over 20 in screen size still gave optical of the spices in a recipe while the smaller particles gave more fullness and Aroma.
in the Old Spice Tins they just filled to set weight amount not filling the Tin.
in either event the weight can be converted either way desired
BUT WHEN we make our spices and herbs as a general rule
we weight the spices in separate amounts Sample below
Black Pepper Cracked 10% Black Pepper 28 Mesh 18% Black Pepper 34 Mesh 10%
Dehydrated Onion Flake 12% Onion Powder 10% Onion salt 10%
our formulas are made to a percentage value then calculated to Grams ounce teaspoon or tablespoon.
It is the same method that CHS spoke about in the Shroud 20, 13, 10 method

400 ounces flour (25 Lbs.) 48 ounces Salt (3 Lbs.) 40 ounces MSG 20 ounces Mild Paprika 18 ounces B&W Pepper (12 Oz.White, 6 Oz. Black) 13 ounces Garlic salt 11 ounces Sage 11 ounces Celery Seed 10 ounces Dried Ancho Pepper 6 ounces Thyme 4 ounces Ginger 3 ounces Mustard Seed 3 ounces Marjoram (or) Mexican Oregano (or) Mediterranean Oregano 1 ounce Cumin

When one does reverse math on Some of the similar and like recipes of Copy Cat KFC or so called Original either Eula or Claudia
similar numbers can be derived into Grams values they may NOT be a exact 20 even but a 20.83 or 20.41 but the general rule was round up or down and Balancing Numbers to a 100 Value and the recipes ALL worked

So I spent some time looking at Eula's recipe from the first post and then the infamous Ledington recipe. As everyone knows they appear to have very similar ingredients and weights. Ledington's based on 2 cups of flour. Eula based on 4. Ledington no MSG, Eula no White Pepper I been a proponent of converting Ledington to teaspoons. Tablespoons is unreasonably high for a lot of ingredients. It was more than likely Ledington suffered the most in the measurements. So let's assume that they are both using the same type of flour. Which is a major assumption. But required for at least provoking thought on the recipe. When you convert ledington all to teaspoons you get something like this. 2/3 teaspoon Salt 1/2 teaspoon Thyme 1/2 teaspoon Basil 1/3 teaspoon Oregano 1 teaspoon Celery Salt 1 teaspoon Black Pepper 1 teaspoon Dried Mustard 4 teaspoons Paprika 2 teaspoons Garlic Salt 1 teaspoon Ground Ginger 3 teaspoons White Pepper
Comparing to Eula's as above and remembering it was for 4 cups flour. You immediately match on the amount of:
Thyme Basil Garlic Salt Ginger
I believe you also match on Oregano if Ledington called for ground oregano it would match
Salt would be to taste and again dependent on grind. Salt to me close. In Eula' s she used 2 Tablespoons Black Pepper only. Ledington's converted would be 1 Tablespoon White plus a teaspoon black. Again close.
Now:
Eula used 2 Tablespoons of Celery Salt and you need at least that amount to help with the salt level. So I proposed Ledington's should read 1TBLS of Celery Salt. Then we are at the 50% we need to match Eula
Both paprika and Dried Mustard are in Tablespoons for Eula. If we leave (make) them Tablespoons in Ledington then a match.
Down to the the fact Eula has no White Pepper and Ledington has no MSG.
So let me rewrite Ledington based on the above. Which now makes both recipes pretty much Identical for the most part.
2/3 teaspoon Salt 1/2 teaspoon Thyme 1/2 teaspoon Basil 1/2 teaspoon Oregano * Oregano, Thyme, Basil all rubbed or all ground 1 Tablespoon Celery Salt * Matches 50% Eula. Needed for Salt level 1 teaspoon Black Pepper 1 Tablespoon Dried Mustard * Matches 50% Eula 4 Tablespoons Paprika * Matches 50% Eula but I think too high 2 teaspoons Garlic Salt 1 teaspoon Ground Ginger 1 tablespoon White Pepper * Convert from 3 tsp to 1 Tablespoons
1) We need to add MSG to this but I think the 6 tablespoons is way too much. And likely not Eula's original anyway. 2) Best guess is we are at 20g of salt. Let's assume 2 Cups of flour is roughly 250g we need to be at or closer to 30g 3) Paprika could have been this high early on but it hasn't been for years probably since early franchising.
