Sage Extract Paprika Extract Pepper Extract Coriander Extract Those 4 likely are/were the highest in the OR back in the day. And match closely to how I was thinking an old 2.5lb (40oz) recipe becomes 26. Those plus I+G and its a done deal.
Extracts have been around a long time. I'll assume Claudia didn't use them early on. In what time frame did CHS stop "hand mixing" their own seasoning bags?
Is Glen's and Jolly Chef and all the others with Black Pepper first and sage low all post extracts. Is my real question.

It has a lot of black specks see here this is KFC Canada. and everytime I open the box I sniff the distinct aroma of something “woody-peppery” and a hint of grill scent. I don’t know about KFC Canada but didn’t CHS retained control of the stores up here after he sold the franchise? So I assume the recipe here is unchanged. here is my theory in Garlic: NWO KFC add this depending on the local’s cuisine. If it’s Asian they would definitely add this because it’s an essential element in asian cooking, but in KFC Caribbean they would put emphasis on the allspice and their capsaicin would be the local scotch bonnet pepper flakes. That’s why you can see many people praising KFC jamaica for being the best. I don’t know much about American cooking but according to my research, American palate is Salt & Pepper. Gloria P. She capitalized the phrase “HE LOVED PEPPER”.

I don’t know about KFC Canada but didn’t CHS retained control of the stores up here after he sold the franchise? So I assume the recipe here is unchanged. Yes, but only until CHS passed away in 1980. Then it all reverted to 'NWO' ownership/control. So to presume that the recipe in Canada never changed post 1980 is a bit of a stretch. Edit: The next time you're in a local KFC, ask them if they use 26 ounce H&S bags (or 740 gram bags, same-same) added to 25 Lbs. of flour and 3 Lbs. of salt.

Bringing this thread back on topic, with that being recipes scaled directly to full compliance with the 40 ounce 'bag', I offer this recipe for your consideration. It is admittedly a 14 H&S ingredients kitchen sink, but it is more conventional than my other recipes of late as to it's White and Black pepper, while adding Cayenne Pepper at a level sufficient to more than make up for the traditional B&W Pepper vs. 6 grams. When scaled to 200 grams of cake flour it also sums to 2.55 grams of H&S "other than" B&W Pepper, rather than limiting these to 2 grams. It is a bit of a throwback. And since I've literally lost count of the recipe iterations I've gone through leading to cook session #13, I'm calling it iteration 'X'. As an aside, I wonder if MK calls their coating mix 99X because it was (or at least felt like it was) their 99th iteration/derivation of juggling the recipe as they sought to capture the elusive 'note'? I hope to find recipe happiness well before reaching my 99th cook session. But I'm already likely well beyond 99 written down recipe "thoughts". Edit: I've left out 'I+G' because I believe the 40 ounce bag to likely precede the era of utilizing I+G.

13 ounces MSG 10 ounces Garlic Salt (~= 9 ounces salt and 1 ounce Garlic Powder) 11 ounces B&W Pepper 6 ounces '9 to at most 11 other H&S'
