I hope this one ingredient I suspect is that one missing piece of the 80 yr old puzzle! We came very close (dustin) but not quite because of that last missing ingredient. I’m going to try it in my next experiment. This one is so common and has been hiding under many people’s nose. So many hours spent staring at the KFC skin and it’s suspicious black specks. My guts is yelling “these are not black peppers, vanilla flakes, burnt herbs, etc. many wonder what your next item is ? The key ingredient that is missing MOST PEOPLE ON THIS SITE TAKE A BETTER APPROACH ask others if they have tried this item or that item and then get reply's I think we have seen items like coffee, Vanilla, Black Garlic, 5 Spice, and many other items and many possibly have OLF recipes where it was tried or would point you to the heading you may find it under. Personally I think more people will NOT reply to your posting when you indicate something with out explanation? or asking for pre input. the 2 Best ever are Silver, and flg who ASK QUESTION AND ASK FOR Input prior to the experiment and learn more by sharing things Pre- we all respect CHS was a Decent man and his work in Canada and Donations to and through the Missions and Churches were MASSIVE. CHS would cook in anyone's home and help at any function he could and was NEVER afraid to roll up his sleeves. There are NOT many people left who had the personal occasion to Work and Worship with CHS. Both CHS and Claudia were unreal people. Claudia spoke little in many words compared to CHS but what she spoke was well worth every sentence. The Original Bags the 11 Spices and Herbs were Claudia's find and they were a Small Flour Bag size that she found worked the Best. One Key thing Claudia spoke about BUT NOT CHS was he was a stickler to staying to certain spices and brands as a rule. He only went away from the once that he typically used ONLY when there was shortages. Claudia always said The Colonel told her what to use when there were situations. BUT SHE ALWAYS ASKED HIM WHAT TO DO even if she knew what other item to use, as CHS was traveling ALL the time more then her and he may have had a different item he wanted to use

My guts is yelling “these are not black peppers, vanilla flakes, burnt herbs, etc. The KFC South Africa website lists "Grill Flavor" as one of the KFC OR ingredients. Grills are always crusty black.

Somehow it is beginning to seem rather appropriate that my 13th attempt at cracking the secret recipe should contain 13 ingredients: I'm going to mix up a 10X sized batch today. It will either be this one, or this one with the last two ingredients removed (to make for an honest eleven H&S) and with MSG and I+G bumped up a bit to make up for the weight difference. I appreciate each of your opinions as to which it should be. Please help me decide. I think the recipe with 13 ingredients is fair. Less than the Kitchen Sink which was one of my better ones before the last recipe. It looks like you are going to try the 50/50 approach to 6g pepper which would be handy for reference.
I am assuming for you at this point it is more about setting up the pepper with a reduced H&S.

I did do some mild reading on White Pepper extract this morning. A few interesting Radical Thoughts I should post in that thread running around upstairs.

I'm leaning toward the 13 ingredients version as well. But in the meantime, my wife has fallen ill, and I have not been able to build this yet. It is taking a back seat as to importance. I like the idea of reduced H&S, as (just as for you) my experience has been that less is generally better than more when it comes to H&S. And I also like the idea of trying more pepper. And I hope the combination of the two sprouts a full song note.

In 1935 Charcoal Seasoning was a Spice and McCormick's sold it in the 24 spice rack for many years.

When Todd Wilbur video the CMT special and he was in the KFC kitchen the spice was had McCormick Grille Flavor seasoning on the season shelve and it was 1/2 used BUT they Do use it it the Grille Chicken they sell.

I can’t find charcoal seasoning nor it’s recipe online. Does anyone here know how to make it? Does it make the chicken charcoal black?

Try adding a drop of liquid smoke, and forget about the black specs.
