Conflate Black and White Pepper to one ingredient (as appears to be done for the H&S Bag ingredient lists), and then add Celery Seed or Coriander Seed, and you have 11 ingredients.

If the high and the low are tossed out as outliers, and the remaining 4 are averaged, and one splits the Pepper into B%W, one gets (by weight): Allspice = 5.00% Clove = 3.75% Ginger = 8.75% Mace = 1.25% Marjoram = 2.50% Nutmeg = 6.25% Black Pepper = 18.5% White Pepper = 18.5% Sage = 13.75% Savory = 8.25% Thyme = 11.25% ----------------------- Total = 97.75% And When Adjusted to 100% -------------------------------------- Allspice = 5.12% Clove = 3.84% Ginger = 8.95% Mace = 1.29% Marjoram = 2.56% Nutmeg = 6.39% Black Pepper = 18.92% White Pepper = 18.92% Sage = 14.06% Savory = 8.44% Thyme = 11.51% ----------------------- Total = 100.00% To make 100 grams of a 'nominal' Poultry Seasoning, add each ingredient with % directly converted into grams. Interestingly enough I had some real KFC left overs for lunch. Now I'm in Canada so YMMV.
Noticeably I am missing the sweetness that I tasted today. But my take on the rest is as follows:
I had the chicken in a ziplock bag in the fridge. So I took a lot of time smelling it and going over my spices. Repeated the same warmed in the microwave and then taste. Wife thought I was nuts.
From a smell perspective the spices I have that seemed the closest.
Summer Savory - Ya I know. But it was the closest thing to what I could smell on the cold chicken Poultry seasoning (McCormick) - I tried sage, thyme, rosemary, basil all individual nothing did it. Poultry seasoning was the closest Ginger - I could smell and taste Garlic - it's minimal but I picked it up Nutmeg - This could have been Allspice but the smell was a bit more nutmeg.
On the fence on cinnamon - I have had bad luck with it. But maybe the sweetness I was missing may help it along with less of it.
So my 5 outside of Salt, Pepper and MSG
Summer Savory Poultry Seasoning Ginger Garlic Nutmeg
Cinnamon/Allspice would still be of interest if nutmeg didn't pan out

I think 1g of McCormick Poultry Seasoning may look like this:
.42g thyme .35g sage .12g marjoram .06g Black Pepper .05g Nutmeg

I'm amazed at the percentage of Pepper in the A-F Poultry Seasoning recipes. It boggles the mind. And seems unreal... Why is even in there at all?

I have some other books as well with poultry seasoning recipes from moons gone by. Very similar in the pepper amounts. Higher than you'd have thought. Store bought today is wildly different.

When I last ate Lee's Famous Chicken, and was blasted away with how much tastier it is than current issue KFC OR, there were distinct 'bright' green herb spots visible within some of the nooks and crannies of the coating. Tarragon?
