I want to make a Personal Observation of Considerable Importance
If you making a recipe and For mathematical purpose you use use 100g of combined spices and herb Plus salt
if you mixed it straight up it would be a 2 - 1 ratio
Now if you mix 5 spices and ONLY mix 50g of spice and Herbs you drop to a 200g to 50g 4 to 1 ratio
Do you NOT think its going to be Flavorless compared to a 2 to 1 mix ratio.
UNLESS my math and logic is incorrect I don't care if YOU dump a Bottle of Ac'cent into the 4 to 1 ratio its NOT going to make a Good Finished product but a Flour Overload.
If you mixed 5 Spices to 100g and Mixed it into 200g of flour a 2 - 1 ration and M.S.G / Ac'cent NOW YOU have Flavor ? which the M.S.G. will Boost.
ONLY MY OBSERVATION
it takes spice and herbs to make flavor YES over Kill is NOT effective BUT under spice and herbs are WORSE.
That's why C.H.S. recommended the Seasoned Flour Lugs be SILFTED continual to keep the Spice Mixed in the Flour NOT at the Bottom of the LUG and then you cook a Plain Flat Dough Ball ?

I know the best way to explain it
The Parts Per Million Ration is OFF Balance when you cut the amount required in 1/2
I would NOT recommend Doubling your 5 items BUT they need to be Increased or the Flour decreased to Get a balanced flavor

Lee drizzled honey over his chicken. Correction, he dips his chicken in a 'wash' that includes some unknown quantity of honey in the water. I've never tasted a sweetness to his 'Famous Recipe' Chicken.

A word of caution for my proposed Lee's Clone recipe '1b'. If you cook it and openly taste excessive Licorice, cut back on the Star-Anise in 0.05 gram increments until it comes right. 0.25 grams of Star-Anise is likely pushing the upper limit.
