A Reverse Engineer was done on KFC Spice & Herb, and Chicken in Canada and these were the results obtained.
Monosodium Glutamate, Salt
Herbs & Spices: Black Pepper, Pepper, Celery, Cinnamon, Chili Powder, Coriander, Marjoram, Paprika,
Vegetable Powders: Garlic, Onion,
Extracts of Spices: Pepper, Paprika, Celery, Capsicum
Milk & Egg Powder
Citric Acid, Yeast

I like reading these as some folks jump to the conclusions and there some times is more there they miss.

No the results are Not located on the interne. It was a Privately funded exercise and the Documents were not released on the internet.
There were NO jumping to conclusions and the test were double verified.
The raw spice was viewed by 5 different individuals and it was separated, then tested against known possible items for base testing.
The items that are listed above are items that were confirmed and are not items which could not be confirmed.
At the time the spice blending companies who were determined to be the supplier to KFC corporation at that time, the above spices were purchased from the supply company samples of the Pepper, Coriander, Marjoram ETC and they were used as a Base test against what was being tested for control accuracy.
please understand that the test were different test some of cooked chicken and some of Raw Spice and the above items were found in the items. The problem which may cause a issue is at the Time some of the items tested WERE NOT hand breaded items in store and were found to be Pre processed item for KFC NEW AGE CORPORATION.
The processed items undergo a different process then the Hand Bread Chicken. It was a over sight at the time test were done.
In either event the Spices were confirmed in KFC Chicken and Spices and herbs blend from NEW AGE CORPORATION
in the Years since the test were preformed Other information which has been obtained in allergy reports from KFC NEW AGE CORPORATION have listed some items in the allergen report they released and Ingredients list not ALL have been verified but majority have been crossed referenced to list
As a note chili powder was determined to be located in the spicy chicken

deepfriednew101 , given the ingredients revealed via the private analysis, what 11 (or 12, 13 ...) H&S would you choose to best fit/match them? If you are willing to reveal it, what is your personal best (generally 'KFC_OR_Like' as to flavor and note) recipe to date, scaled as you see fit, and in units as you see fit (such as cups, teaspoons, tablespoons, pounds, ounces, grams)? If you cook using a Lug, scale it to just that, so there is no need to try to figure out scale reduction factors, and no worry as to scale reduction miscalculation induced error thereby.

All we use are Lugs to mix with 18LBS of flour and 3Lbs of spices and 3Lbs of salt
its basically a 25LBS combined Mix
we have mixed larger volumes BUT use % values for all calculations ALWAY its the simplest and NO BS .003 values always round up to .25,.5, .75 1Gram
