I know that I'm a Broke Record with the spice and herbs on the Egg and Pasta trick. Saves lots of chicken cooking.
If I could Make a suggestion, I would toss in other items which has more Bite like the Sage, or Poultry you are staying in the base of a pepper tingle with Sage, Mace also but a sweeter. Marjoram will get a enhancer to the Pepper also. Italian seasoning has More BITE then a Herb de Providence also
I agree if your trying to stay away from the Clove allspice cinnamon. To isolate flavor.

Looking at your second Recipe
I would like to do a rework of my own take with the Pepper Side items 6 Bag 1 of from one of the suppliers that KFC says they MIX with the second Bag from supplier 2 5 Spices to make the 11 Herbs and Spices

Open Fried Test had one piece that was moved before the coating set on the wing. BUT All the Meat was Juicy NOT a issue. I will post the recipe we used. It was Lacking Herb and Season that is NEEDED. we did use the Herb De Providence and I just don't get the results We Care for ON THE Larger Chicken Pieces for the Wings its fine. NOW in the Herb De Providence defense the stuff we have been getting is CRAP. Personally we don't use much of it BUT in Beer Can Chicken recipes we have. I need to source a Better Quality of it or Blend Our Own and it may be MUCH better Final thought Parsley, Rosemary, Sage, Thyme, Oregano (NEEDED in Chicken recipe) you can mix and match the items BUT they Are Needed. They have to many qualities which are Taste Favor and Aroma NEEDED in Roasted Grille BBQ and Deep Fried Chicken or Turkey Poultry

It cooked Nice and was NOT bad BUT in the BIG picture was a success of Trials on Pepper side of Chicken Cooking.
I will Swing NOW to a More Herb and Spice Recipe which I know will Lack the Pepper BUT not concerned about that for MY results waiting for Deep Taste review.
I personally like a HIGH end Pepper amount BUT other may not.
flg your Recipes with more Balance item have MUCH MUCH more flavor overall.
I know this is more a single out recipe flavor Test Deep Taste went after and I Loved it
This Recipe falls more on the Theory ONLY 4 items Flour, Salt, Pepper, MSG. Only on my view as we did NOT get the CRANK and KICK from the Herb De Providence in our test.

Will be Cooking DTXP 786 tomorrow.
All I am studying now is the Pepper profile, I want it to be as fresh and dominant as the last time I tried the real KFC.
If I got there, I will start adding the other herbs and spices separately to examine their interact with Pepper.

Are you using Whole Peppercorns and Grinding them yourself ?

I know there are Many who say Tellicherry Does Not make a difference.
I will maintain the Larger the Peppercorn the More mature typically and MORE OIL. MORE FLAVOR.
also in a small test try some lemon pepper as a second ad in to a few pieces ?

Yes, I grind them fresh for every batch , lately I am using more black Pepper than white, white isn't giving me the same dark specks I get from KFC, and I've read the ingredients of one KFC site and they are using more black Pepper than white nowadays too.
